Chef RC knew the new menu wouldn't be complete without his take on a winter classic - Duck. In order to bring the best out of this sometimes tricky protein, he wanted to keep these flavors simple, without overcomplicating the process.
Inspired by classic German cuisine, the seared duck is served with spรคtzel, made fresh for each order. Braised red cabbage adds to its traditional flair, but it's the whole grain mustard sauce that really makes this dish sing.
