Brussel sprouts.
This vary wildly chef to chef And depending on the quality and size of the brussels sprouts. All ingredients figure to your taste.
One serving was roughly
10-12 Brussel sprouts blanched or not halved
Olive oil and canola oil or butter
Salt and black pepper
lemon juice Roughly 1/2 a medium lemons worth.
2 to 3 heaping tablespoons of crushed pistachios.
Freshly grated Parmesan cheese .
Some chefs added balsamic vinegar or white wine but the originals was those above
Heat your pan with oil if needed. Add brussels sprouts get a nice and charred Add other ingredients in toss. Plate and add Parmesan cheese

Fez burger patty
1.5 pound ground beef 80/20
1/2 lb linguica or chourico ground (we used gaspars brand)
1/4 tbsp smoked paprika
1/2 tbsp onion powder
1/2 tbsp garlic powder
1/2 Teaspoon ancho chili powder
Half teaspoon cayenne
Half teaspoon black pepper
1 tablespoon chopped parsley
Mixed together a little at a time to evenly spread everything.
If you use Chourico You can cut back your spicy spices a bit. This can get really smoky so make sure you have a good hoodfan inside or just grill it outside. Again we used Martin potato rolls.

Sweet potato burger
Ingredients:
One medium onion Spanish or red finely chopped
Half a bunch of cilantro finely chopped,
One bunch scallions chopped
1 tablespoon minced garlic
1 1 tablespoon pickled or regular jalapeños diced
Half a teaspoon ancho chili powder
Half a teaspoon chipotle chili powder
Two eggs or to veganize 1/4 cup oil 1/2 tsp flax
1.25 cups All purpose flour or we used gluten-free flour
3 Medium sweet potatoes shredded (if you use yams You can cut back your oil or eggs)
1 tablespoon salt
1 teaspoon Black pepper.
Shred all your vegetables and combine all ingredients together and mix until it’s wet and Cakey.
We would give it an extra squeeze begire forming a patty to get rid of the excess moisture. We would deep fry ours canola oil.
But you can try an air fryer or pan fry them or even bake them. Feel free to adjust ingredients to taste. We put them on the Martin’s potato rolls.
