@7hWe are a custom wild game processor located in Quitman, Tx. Previously Hartvickson Family Farm, our doors were closed due to the pandemic.

Our combined farming and lifelong hunting experiences helped us see a heavy need for processing in the area.

We are so excited we get to OPEN TODAY 10-20 and we have exciting news God is working BIG in our little shop this year!!

This year we have partnered with Hunters for the Hungry AKA Feeding Texas AND They Got Your 6 Foundation we will all be working together to bring deer meat to the families in Wood County who need it!

We can only accept deer.
7-H will provide all processing needs.

Here's how YOU can participate in feeding our county!

1. Any monetary donations can be given straight to Feeding Texas or They Got Your 6 Foundation to help fund this project.

2. You can donate a deer or 2 or 3!
(Yes you have to use your own tags and it HAS to be a legal deer)!

3. You can share this post to help reach as many people as possible!

All meat will be distributed by East Texas Food Bank and They Got Your 6, right here in Wood county!

Many of our loyal customers have asked where we have been for the past year. While we have appeared to be quiet, we have been hard at work building (literally) up to this moment. We now offer wild game processing!

This is just to help benefit others. We are gaining nothing from this. No need to try and defend yourself for not knowing a different way. It’s not a personal attack. Thanks and enjoy.

I took a few classes a few years back to educate myself more about this. I was raised doing exactly what you’re NOT suppose to do. But I have learned the ONLY reason you should put deer in a cooler is simply because you don’t have a way to hang it to dry. There is more inside the meat 1” deep when soaked than if left out. It’s literally the worst thing to do. If you believe this is the right/better way to make your deer meat better/less bloody you just simply are wrong. I raised my hand in this class with 35 other butchers and argued this point where I got educated by scientific fact to the point the instructor done a demonstration the next day that 100% proved me wrong thinking anything on ice was the correct way.

Just a reminder to all our hunters, a few facts to keep in mind this season. Here are a few things we’ve learned over the years as we constantly push to raise the bar: this picture and some of this message was from another deer processor.

1. Deer do not require aging like beef because venison is a lean meat and does not retain water like beef . You actually lose flavor while gaining tenderness . This makes for a tender steak but less flavor and not fresh ground burger.
2. Please do not soak your meat. Blood is in the veins not the muscles . Myoglobin is the red/pink you see in the muscles . A Muscle is like a sponge that soaks up the water in the ice and makes tasteless steaks and wet burger .
3. If you MUST put venison in a cooler: To have great tasting meat, place your venison in a bag then in a cooler to keep the meat cold and dry.
4. The wild game taste you get at other processors is the result of them leaving some tallow/fat behind trying to cut corners, leaving glands inside muscles and the kind of fat added. While you can hide it from the eye when you grind it all up, you are left with the game taste. Some of this post was borrowed from an absolutely amazing place in Lincoln alabama. William dropped off a nice buck last season and loved all of the snack stix and sausage we made him. We also turned his prize buck into this euro mount that he and his wife were over the moon happy about. Deer season starts soon, are y'all as ready as we are!?

I am the owner of 7-H Processing

I will not apologize for my pricing.

No small business should.

My pricing allows me to make a profit.

Which allows me to pay my bills.

Which also allows me to stay in business.

My pricing allows me to employ people.

Which allows them to pay their bills.

My pricing allows me to pay myself for the countless hours I work. I’m truly never “off the clock”.

My pricing keeps a roof over my head and food on my table.

I own a small business. One where the CEO knows your name and truly cares about you.

I am not Walmart (a 500 billion dollar company). I’m unable to provide things at the “lowest price”, order millions of units, and still stay in business.

Im not the “cheapest”. I’m also not “the most expensive”.

My pricing is what it is to allow this small business to keep going which allows me to keep making a positive impact.
