Tasting Notes:
Starlight Finished in VDN Barrels:
Nose
You’d think oranges would be the first note, but it is actually the smell of melted Halloween Candy Corn. Those artificially sweet notes actually combine quite well with notes of pithy orange flesh and sharp cinnamon. This is a really fascinating nose when all of those notes combine with oak spice and a more mellow, seasoned oak.
Palate
The spice is very prevalent upon each sip, attacking the tip of your tongue. Cinnamon rolls smothered with orange creme icing showcase a sweeter version of Starlight’s standard bourbon. It has very bold flavors but cannot completely cover up the youthfulness of the bourbon underneath.
Finish
Orange notes stay on my tongue stick around for a long time. They are a bit sweeter than they tasted on the palate. There is still sharp cinnamon flavors and other baking spice notes floating around giving a warm Kentucky Hug all the way down.
Starlight Finished in Rum Barrels:
Nose
The rum notes are apparent on the initial nosing of this whiskey. One can pick up sweet molasses, stewed cherry, vanilla extract, and fruit preserves. Allowed to open up a bit, the aromas change slightly to cotton candy and hints of caramel candy.
Palate
Notes of herbal dill, cardamom, and white pepper play together with the sweet notes of leftover rum that has soaked into the barrel. Notes of graham cracker from the rum barrel along with whiffs of molasses and burnt sugar evolve into fruity notes like macerated raspberry and black cherry.
Finish
The finish starts with the black cherry and dark berry notes I on the palate. It is long, spicy, and warm. The notes of stewed cherry enhance the aroma and make an appearance again at the tail end of the finish. Slight notes of new wood, sweet pipe to***co, herb garden make their way to the front of the palate as you breath out.
Starlight Single Barrel:
Nose
Heat opens up the scents first on the nose. Other scents include nutmeg and allspice. This is followed by scents of cornbread and vanilla pudding. There are some fruit notes you can pick up on as the session goes on.
Palate
Corn-forward for sure, but other flavors include raspberries and shredded coconut. The spice keeps each sip very lively on your tongue with the cinnamon, nutmeg and allspice transferring directly from the nose.
Finish
The herbal qualities and rye spice surge upon the completion of the sip. The corn-forward nature of the palate disappears a bit while wilder flavors remain.
Starlight Single Barrel Finished in Cognac Barrels:
Nose
On the nose, apricots on caramel cake, with vanilla wafer, cinnamon tea, and clove, with the Cognac finish in the background.
Palate
On the palate, dark fruits from the Cognac finishing, surge into balance with apricots, caramel cake, and vanilla wafer with spice percolating
Finish
The finish is layered and pleasant with dark fruits and clove outlasting apricots and sweeter elements.
