It is official!

Doreen Colondres has been appointed by the European Union as the new ambassador of a campaign of the renowned food and wine regions D.O. Cava and Consorcio del Jamón Serrano Español and it is starting this weekend at the exclusive FOOD & WINE Classic in Aspen.

The campaign will extend its reach to New York City and San Francisco, featuring master classes and events for both trade professionals and consumers, including classes in culinary schools across the US. Additionally, Doreen will develop recipes and lead several media trips to Spain, providing a firsthand experience of the unique traditions and exceptional quality behind D.O. Cava and Jamón Serrano.

We loved helping our wine lovers improving their memory bank of aromas and flavors last night.

It doesn’t matter how much you think you know, there is always room for improvement, and tasting new wines offers opportunities to gain more knowledge and experience, specifically if you are starting.

Tasting is not a single event but a series of events, it requires deep concentration and extensive practice. Remember, aromas and flavors are created by nature and by winemakers, and perceptions of flavors are created by our brains. It requires patience!

🟢 Meanwhile… this is the current situation in Chablis.

The vine’s vegetative cycle goes on with some Chardonnay buds at the “unfolded leaves” stage.

Some, less early, are still at the previous stage. There is therefore some heterogeneity this year in terms of speed of development depending on the plots and their location.

🔜 For the moment, 2024 is still 10 days ahead of the average for the last 20 years. We are keeping our fingers crossed that no spring frosts will disrupt this fine start.
