Adobong bukid sa achuete
I always buy young whole chicken dahil I find it tastier and leaner. Mataba na nga ako, pati manok ko mataba pa rin? May ganon. Feeling ko pag dumalagang manok, sarap sabawan. Today, we are cooking adobong bukid sa achuete!
Ingredients:
1 whole young chicken, cut into servings pieces
7 young potatoes, cut in half
1 packet, powdered.annato or achuete
1 tablespoon, chicken powder
6 large.cloves garlic, crushed with skin on
Black pepper to taste
White.vinegar to taste
2 pieces of bay leaves
Patis to taste
Cup of water
Olive oil
Procedure
In a wok, heat up the olive oil and saute the garlic until aromatic. Followed by the annato powder, chicken powder and patis. Then, saute the chicken in this mixture along with the young potatoes and the bay leaves. When half done, pour in the vinegar with the water and sprinkle with black.pepper. Cover until simmerring. Continue to boil until sauce in reduced. Use more patis or vinegar to adjust taste.
Enjoy with a ton of steamed rice!

Spoiled Bacon
Ha! Hindi po ito about panis na pagkain. Our furbaby, Bacon is going to be four this year. As luck would have it, we managed to get the most makuriring a*o sa buong mundo. Unlike other dogs that would devour any food on site, konti lang ang gustong kainin ng alaga namin: chicken, sweet, potato, grilled beef patty, fried fish. Kaloka di ba? Minsan tuloy parang nagsasawa na sya sa chicken nya. Minsan, need ko pa sya subuan para kumain.
Last night, I boiled 2 small kamotes for him. Mashed them and mixed in minced boiled chicken skin. Yan ang supposedly ang lunch at dinner nya today. Kaya lang mukhang mabibitin sya sa dinner. Eto na lang kasi ang natira nya after lunch:
Chicken Pastil
Last night habang nagluluto ako ng pinakbet, nagpalambot ako ng chicken thighs. I know, usually breast ginagamit sa paggawa nito pero for some rea*on mas type ko ang lasa ng dark meat sa chicken. This is my second time to cook this dish. Hindi pa ako nakakatikim noong tinitinda nila sa Quiapo kaya sorry naman kung medyo iba itong recipe ko.
Ingredients:
1.5 lbs chicken thighs, boiled in water with garlic, whole black pepper and salt
5 cloves of garlic, minced
1 small onion, minced
Olive oil, 2 tbsp
2 tbsp chicken powder
1 packet, powdered annato
1 tsp black pepper
3 tbsp soysauce
3 tbsp oyster sauce
3 tbsp white vinegar
2 tbsp turmeric powder
Stevia, to balance taste
1 dried Thai chili pepper
Procedure
After boiling the chicken, cool ot down and pull the meat apart finely
In a wok, heat up the oil and stir fry the garlic, dried chili pepper and onion until onion is translucent.
Infuse the mixture with the powdered annato, mixing very well followed by the turmeric powder. Put in the chicken, soy sauce and oyster sauce until well incorporated.
If the mixtures looks too dry, pour in a little water followed by the vinegar. Discontinue stirring or mixing until vinegar has evaporated for 3 minutes.
Pour some Stevia sweetener to taste.
Cook until chicken is stringy and sauce is no longer watery.
This dish is sooooo intensely savory. Kaya pala when they sell it, maraming rice tapos konti lang yung chicken.
Winner! Ito ang baon ni daddy sa work today.

Sweet chili stir fry
Pasintabi sa mga professionals, imbento lang po ito. Pasado naman sa taste ni Daddy kaya winner na rin. Paired with fried daing na bangus for this meatless fridays of the lenten sea*on. So eto na nga:
Ingredients:
Sauce:
5 tbsp of oyster sauce
3 tbsp of honey
2 tbsp of soy sauce
3 tbsp zhao xing cooking wine
1 large japanese eggplant cut into 4 and further quartered
1 package firm tofu, cut into bite sized pieces, salted and drained
1 pack of cremini mushrooms, sliced thinly
1 small onion, diced
4 large cloves of garlic, minced
2 carrots sliced
15 pcs pechay baguio, cut to bite size pcs.
2 pcs dried thai chilis
Procedure
In a wok, heat up oil and fry the tofu until golden brown. Set aside.
In the same oil, fry the eggplant. Set aside.
Discard or save most of the oil and use what's left to stir fry the following:
1. Garlic, until slightly brown
2. Onion, until translucent
3. Carrots and mushrooms
4. Fried tofu, eggplant and pechay baguio
Splash 2 tbsp of cooking wine into your stir fry and let it evaporate for afew seconds. Stir in the sauce and let it simmer for 2 minutes.
Serve with rice and fried fish. Winner na naman sa kusina!
Chop Suey na medyo di Pinoy
My 2nd bout with Covid proved to be more ornery inspite of the vaccines and boosters. But, we made it! Matagal na recovery but buhay pa ang lola nyo.
At dahil jan, luto muna tayo ng maskipaps dahil di rin ako nakakapamalemgke ng ayos.
Eto na ang chop suey maskipaps based sa ku ung ano nasa fridge namin today.
Ingredients:
1/2 lb pork strips
1/4 lb charsiu pork, cut into strips
6 pcs of jumbo shrimp, peeled and deveined
6 cloves of garlic, minced
1 small onion, quartered
2 small.carrots, sliced diagonally
2 sticks of celery, sliced diagonally
1 small red bell pepper, cut roughly into squares
1 chines sausage, cut thinly, diagonally
1 small chinese cabbage, cut into squares
6 large brocolli florets, cut into smaller parts
2 green onions, cut into 2 inch pieces.
Olive oil for sauteing
1 tbsp of sesame oil for fragrance
4 tbsp of oyster sauce
Ground black pepper to taste
3 tbsp chinese 5 spice
Water tbd
Procedure:
In a wok, brown the pork in some olive oil. Saute in garlic, onion and five spice. When the onion is wilted, put in carrots, celery and red bell.pepper. Mix well.
Then, put in the shrimp and charsiu pork and cook for 2 minutes. Sea*on with oyster sauce. Since kokonti na ang oyster sauce ko, nilagyan ko ng water yung bottle at sinimot ko sya by shaking. Ilagay mo itong tubig na ito sa niluluto mo.
Takpan at pakuluan for 2 minutes. Pag malapit mo na hanguin, ilagay mo na ang pechay baguio at brocolli. Dapat saglit lang ito lutuin para di mawala ang nutrients. Sea*on with some black pepper to taste. If you want you can use patis also.
Alert: niluto ko ito close to.midnight para sana kinabukasan. But ate decided to have midnight snack kaya patay tayo jan.

Revenge mushroom
More than 2 weeks na mataas ang hayblad ng lola nyo. Di tayo masyadong makagalaw sa kusina. Since medyo okay pakiramdam ko ngayon, pinagluto ko si daddy ng request nya na chopsuey. Naggawa din ako ng meryenda nya para mamayang madaling araw...baked sweet peppers stuffed with mushrooms and mozzarela. May natira pang mushrooms kaya niluto ko na rin. Pampartner sa peppers mamaya.
Ingredients:
3/4 box of white, button mushrooms, sliced
Hoisin sauce 2 tbsp
3 cloves of garlic, minced
No salt sea*oning
Olive oil
In a small pan, heat up some olive oil and saute garlic and mushrooms. Incorporate the hoisin sauce and sea*on to taste.
Voila!
This simple dish can be used many ways: topping for burgers, pasta, anything!

Five spice pork and eggplant
Minsan ang hirap mag isip ng lulutuin sa araw araw. Especially pag sawa ka nang kumain at magluto ng yun at yun din. Kalimitan, we are forced to invent ulam. So eto na nga, dahil may nakafreezer akong pork strips na nakamarinate, partneran na lang natin ng kung anong gulay na nasa ref.
Ingredients:
1 quart Ziplock bag, pork strips marinated in cornstarch, hoisin sauce, mirin, soysauce and ground black pepper
1 onion, quartered
1 red bell pepper, cut in bite sized squares
4 cloves of garlic, minced
2 eggplants, sliced in squares, basta
2 tomatoes, quartered
2 pieces, mini.pechays, cut roughly
Olive oil
For the sauce:
1/4 cup soy sauce
1 tbsp five spice
2 tbsp sesame oil
2 tbsp mirin
1/4 cup shao sing cooking wine
2 tbsp maple syrup
Procedure:
In a wok, fry the pork strips in olive oil until brown. Set aside.
In the same oil, fry the eggplants until cooked. Set aside.
Using the same wok, saute the aromatics until well cooked. Return the pork strips to the pan and saute for 2 minutes. Pour the sauce over. Mix well. Once boiling, put the eggplants in the wok. Before serving, place pechay in the pan and cover.
Magagalit ang rice cooker mo dito.

Alfredo pasta paspas
Last week, pasta at yogurt lang ang pwedeng kainin ni Otnik. Kawawa naman. Feeling ko, one week silang gutom. I made this pasta dish for them:
Ingredients:
Spaghetti noodles [one box, cooked per package directions]
1 bottle, Alfredo sauce, with roasted bell peppers
1 cup fresh milk
Parmesan cheese,.to.taste
Olive oil
Ground black pepper to taste
2 cans tuna, in brine
1 can century tuna, hot and spicy flavor
4 cloves garlic, minced
1 small onion, minced
Procedure:
In a wok, saute garlic.and onion until onion is translucent. Saute canned tuna for 2 minutes. Pour alfredo sauce and fresh milk and let boil. Put parmesan cheese and black pepper to taste. Mix in the cooled noodles. If too dry, pour some pasta water.
Serve hot or cold. With tinapay or wala.

Ampalaya con carne
Ang ganda nong ampalaya sa grocery kaya naenganyo akong bumili. Meron akong nakamarinate na beef sa fridge yun na lang siguro ang gagamitin ko.
So eto na nga:
Ingredients:
1/2 lb of beef strips, marinated in cornstarch, hoisin sauce and ground black pepper. Best if marinated.overnight.
2 ampalayas, seeded and sliced thinly
1 onion, sliced thin
4 cloves of garlic, crushed
1 tomato, chopped
2 eggs, beaten
Olive oil
Patis to taste
Procedure:
In a bowl, brine ampalaya while prepping your other ingredients. Before cooking, remove all the water by gently squeezing the ampalaya. [Para di masyadong mapait ang kahapon at hinaharap natin]
In a wok, heat up olive oil and fry the beef until browned. Malasa na itong beef kaya hinay hinay sa paalat. Set aside.
In the same wok, saute onion, tomato and garlic. Once the onion is transluscent, lagay mo na yung ampalaya. Wag masyado haluin. Takpan. After 2 minutes, ilagay na yung beaten eggs. Haluin until cooked. Ibalik na ang beef. Use patis as needed.

Gulay na nilaga. Maskipaps. Basta nasa bahay kubo, keri. Pag sawa ka na sa sinigang or nilaga, gawin mo naman ito. Mahilig ako sa pantry meals. Yun tipong kung ano makita mo sa kusina, yun ang ilalagay mo.
So eto na:
Ingredients:
1 ampalaya, seeds removed, cut bite size, binabad sa brine
Chinese long beans, cut 2 inches
Kamote, cut into large chunks
1 medium onio , quartered
1 medium tomato, chopped
1 small thumb of ginger, peeled and chopped
2 stalks of celery, cut to 1 inch pcs.
1 eggplant chopped
Pechay baguio, sliced bite size
1 mini pechay, remove hard stalks.
1 pouch of galunggong flakes
Balayan or fish bagoong, to taste
Anaheim pepper
Procedure:
In a pot boil water and cook veggies in this order:
1. Aromatics-onion, tomato, ginger, celery
2. Hard veggies- ampalaya, kamote, eggplant
3. Leafy - pechay, mini pechay
4. Anaheim pepper or other siling haba
Use fish flakes to add flavor. You can also use other fried fish. Left overs are fine. Then mix in the fish bagoong to taste.
This is a soupy, refreshing veggie dish na walang stress dahil kahit anong veggies pwede.
Best with rice and fried fish.

Mango and cucumber salad
Ha! Puro salad tayo today. Sobrang init na kasi dito sa barangay namin kaya dapat malamig ang meryenda natin! Sad lang na hindi pinoy mango ang nabili ko nong isang araw kaya I decided to make a salad instead of a dessert.
So eto na nga:
Ingredients:
3 mangoes, peeled and diced
10 mini cucumbers, halved lenghtwise and sliced thinly
Tajin sea*oning CIlantro, Lime flavor, eyeballin mo na lang
1 tsp ground black pepper
3 tbsp honey
1 tsp salt
Combine all ingredients.in a bowl. Serve chilled.
Okay na side para sa pritong GG or kahit anong prito!

Mini cucumber salad
Happy ako na may tinda silang mini cucumbers sa Sam's Club. 5 bucks a bag with 908 grams. Winner ito kasi di mo na need balatan. So.refreshing for summer.
So eto na:
Ingredients:
12 pcs mini cucumbers, cut in half lengthwise then sliced.thinly
2 tbsp sesame oil
4 tbsp honey
2 tbsp white vinegar
2 tsp salt
2 tsp ground black pepper
1 tbsp roasted sesame seeds
Combine all ingredients in a bowl. Adjust for taste. Serve chilled.
Winner toh, pramis!

Sardinas na Bangus
This is the 2nd time na gumawa ako nitong sardinas na pinustang bangus. [Ayaw ni daddy ng bangus kasi matinik, kaya gumawa ako ng lutong pati tinik, makakain nya] Yung first time, I followed a simple recipe I found on the net. Although masarap naman, masyadong mahinhin ang flavor. This time, nagdecide ako na ilagay ang mga ingredients na GUSTO ko. So eto na nga:
Ingredients:
2 whole bangus [milkfish] na pinusta or cut into steaks.
Salt for brining
Water for brining
For the sardine flavor:
2 tbsp dark sesame oil
1 cup olive oil
2 tbsp white vinegar
2 heads of garlic, mashed or ground
1 laaaaarge thumb of ginger, sliced and smashed
2 tbsp of whole black pepper
10 pcs dahon ng laurel
1 large piece of roasted bell pepper, sliced.maskipaps
Olive oil from jar of roasted bell pepper
Garlic powder
3 pcs of dried Thai Chili
Splash of Hoisin sauce
Water for topping
Procedure:
In a large bowl, marinate bangus streaks in brine [salt and water]. I did this overnight.
In a pressure cooker, arrange the brined fish in layers. Line the pot with all the ingredients. Add enough water to cover the 2 layers of fish.
I set the pot to cook for 90 minutes or 1 hour and a half.
[I think next time, try ko naman curry flavor na may gata]
Hashtag excited sa bangus na walang tapon. Wagi pati kaliskis.
P.S. medyo maanghang ito. Adjust the hotness down by reducing number of Thai Chili peppers. Or damihan mo ang rice!
Sipo egg, Reno version
Hayst, desidido akong magluto ng sipo egg pero di pala kumpleto ang ingredients ng lola mo. Pero, laging sinasabi noon ng nanay ko, na hindi naman kikibo ang ulam na yan kaya keri na rin.
Ingredients:
1 can boiled quail eggs
2 medium carrots, diced small
1 large potato, diced small
8 pcs 1/4 inch sliced ham, diced
1/2 lb chinese pork bbq, sliced thinly
1 can of green peas
2 cups, frozen corn niblets
1 stick of butter
4 cloves of garlic, minced
1 medium onion,, minced
1 small can of cream.of celery
Fresh milk, eyeball this
1 tbsp of pork broth powder
Procedure:
In a wok, melt butter and saute garlic and onion until translucent then ham and pork barbeque to be followed by carrots, corn, green peas and potato. If you want more crunch, you can use water chestnuts instead of potato. After sauteing the veggies, pour in the cream of celery. Mix in the pork broth. Splash some fresh milk to help blend the sauce. Add water, about 1 can [use soup can].
Mix well. Add the quail eggs when the sauce starts to boil.
Dats it! Sumipo eggs kahit waley shrimp.
Steamed Red Snapper
Nagkecrave ako ng isda. Kaya nong pumunta si daddy sa walmart, sabi ko uwian nya ako. Red Snapper ang iniuwi nya. I-google nyo na lang kung ano sa Tagalog. Mukang masarap.pero takot ako sa mantika! At dahil jan, steam na lang natin:
Ingredients:
1 red snapper [it came already dressed, wala ng kaliskis at hasang]
2 tbsp Shao sing cooking wine
Salt
Green onions, cut into 2 inch portions
Ginger, julienned
2 tbsp soy sauce
1 tbsp sesame oil
Olive oil
Score the fleshy part of the fish on both sides. Put a little olive oil on a glass or ceramic plate. Put some of the ginger and scallions on the plate before placing the fish on it. Liberally sprinkle salt on the fish and pour cooking wine all over. Marinate the fish in salt and wine for at least 10 minutes. After marinating, put the rest of the ginger and scallions on top. Combine soy sauce and sesame oil in a cup and spread it all over the fish.
In your steamer, boil water. Make sure that the water is boiling before placing the plate in it. Steam the fish for 7-8 minutes. [Doing it longer is not advisable because it will make the fish tough]

Pork Lettuce Wrap
Originally, chicken lettuce wrap ito, pero wala akong chicken ngayon kaya ground pork na lang ang ginamit ko. Chicken lettuce wrap is one of the more famous dishes sa mga "american chinese" restaurants dito sa States. This is my version of this appetizer.
Ingredients:
2 pkg of ground pork, about 4 lbs.
1 medium.onion minced
2 cloves.of garlic, minced
1 large thumb of ginger, minced
2 cans of water chestnuts, minced
4 stalks of green onions, minced
Olive.oil
Sauce:
3 tbsp sesame oil
4 tbsp soy sauce
6 tbsp hoisin sauce
6 tbsp brown sugar
6 tbsp shao sing cooking wine
Patis to taste
Chili powder to taste
Iceberg lettuce, separated, washed and chilled
Procedure:
Combine all the ingredients for the sauce in a bowl. Mix until well blended. Set aside
In a wok, heat up some olive oil and saute ginger, garlic and onion. Once the onion is translucent, add the ground pork and cook until slightly brown. Gradually, add the sauce until it thickens. Add the water chestnuts and the green onions. Mix well. Cook uncovered until moisture is almost gone.
Serve on lettuce leaves. Enjoy!
*usually, garnish used to serve this is fried sotanghon noodles at the restaurants, but you can choose to do without.

Kare-kareng transformer
Kanina, maraming uwi sa akin si daddy. Puro ingredients ng mga request nyang pagkain. Lamnadis my friends. Pasimpleng: magluto ka naman!
So, luto muna tayo ng vegetarian kare-kare na nagiging crispy kare-kare!
Ingredients:
1 large talong, cut into large cubes
1 handful of green beans, cut into bite size pieces
6 okra, tips cut, then cut into halves
1 medium onion, chopped
1 medium tomato, chopped
2 cloves of garlic, minced
1/4 head of cabbage
2 small pechays, cut of hard stem
1 package of annato powder
1 cup of roasted rice, ground into powder
5 tablespoons.of peanut butter
14 ounces of hot water
2 tbsp of powdered beef broth
2 tbsp of cooked shrimp paste
Olive oil
Pork liempo, dredged in cornstarch then fried
Procedure:
In a large pot, heat up some olive oil and saute garlic, onion and tomato. Once, fragrant, add the shrimp paste and annatto powder. Saute eggplant, okra and green beans until well coated by reddish aromatics. Dissolve the beef broth powder in the hot water. Pour this mixture into the pot. When the broth boils, add peanut butter and the roasted rice powder into the mix. Blend well. Let it boil. A few minutes before serving, add the cabbage and pechay in the pot.
Serve as vegetarian kare-kare with steamed rice or add crispy fried liempo on top.

Siomai labs.
Ground pork na lang ang protein sa freezer namin at wala na rin akong gulay sa fridge. So, gawa na lang tayo ng siomai dahil yan lang ang kayang isupport ng pantry natin today.
Ingredients:
1 package.of ground pork, about 1.5 lbs
1 can of water chestnuts, minced
1 cup of dried shiitake mushrooms, rehydrated and minced
1 large thumb of ginger, peeled and grated
Ground black pepper
1 tbsp of powdered.pork broth
1 tbsp of sesame oil
1.5 tbsp of cornstarch
Round siomai wrappers
Procedure:
Combine all the ingredients and mix well. Place a spoonful of the mixture in a wrapper and shape it into rounds with thumb and forefinger. This recipe makes about 38 siomais.
Serve after.steaming or frying. Dip in sauce of choice.

Soy sauce chicken ni niknik
We love going to chinatown in San Francisco. Lots of great bargains and good food. Tapos mura pa! Again and again.
Anyhoo, ang favorite ni baniknik na orderin sa chinatown ay soy sauce chicken.
Super simple but yummy. Wala nang masyadong checheburetche!
Ingredients:
1 whole chicken or chopped chicken parts, kung anong meron
6 cups of water
Half a cup of soy sauce. Dark lang meron ako
1 cup of cooking wine
3 pcs of star anise
5 large cloves of garlic, smashed
1 laaaarge thumb of ginger, smashed
1 bark of cinnamon or powdered, whicheverloo
2 tsp of 5 spice
1 and a half cups of brown sugar
Orange zest [dapat dried orange peel pero waley ako non]
2 tbsp sesame oil
Procedure:
In a deep pot, combine all ingredients except the chicken. Let it boil, making sure that the sugar is dissoved. Once you get a rolling boil, put in the chicken.
Make sure that it is submerged and basting the inside cavity of the chicken from time to time. Pag chicken parts ang gamit mo, just make sure that no part of the chicken is not under the broth. Let it boil hard for 30 minutes covered most of the time. After 30 minutes, lower the temp to low and let it boil for 15 more minutes.
After cooking, let the chicken cool for 20 minutes and slice if you need to.
Serve with love and rice.
