RECIPE OF THE WEEK: Grilled Chicken & Peach Skewers

RECIPE OF THE WEEK: GRILLED CHICKEN & PEACH SKEWERS
This is such an easy recipe, rich in flavor sweet & savory! Perfect for this summer because you can make them in the grill.
You will need:
• 2 lbs Chicken Thighs (boneless, skinless, cut into small cubes)
• 5 Peach (medium, cubed)
• 2 cups Red Onion (cut into chunks)
• 10 Barbecue Skewers
• 3 tbsp Avocado Oil
• 1 1/4 tsp Smoked Paprika
• 1 1/4 tsp Chili Powder
• 1 tsp Garlic Powder
• Sea Salt & Black Pepper (to taste)
• 3/4 cup Barbecue Sauce
Directions:
1. Preheat the grill to medium-high heat.
2. Thread the chicken, peaches, and red onion onto skewers. Brush with the oil.
3. Mix the smoked paprika, chili powder, and garlic powder in a small bowl. Evenly season the skewers with the spice mixture, salt, and pepper, coating all sides.
4. Grill for three to five minutes on each side or until charred and the chicken is cooked. Brush the barbecue sauce over the skewers for the last two minutes.
5. Divide evenly between plates and enjoy!
