We have had such a great turnout for our last few classes that we will be offering 2 classes in March! Details are posted in our events. Please email [email protected] with the date/school of your choice and the number of kids that will be participating to reserve your spot. We will be capping each class at 15 families so RSVP soon guarantee your spot!

Tonight was another fun Little Chef’s class at Waco! Thanks to my helpers and those who came out to participate!

Pumpkin Pancakes Recipe

Ingredients
3/4 cups flour
¾ tsp baking powder
1/4 tsp baking soda
¼ tsp pumpkin spice
1/4 cup pumpkin
1 tsp ground cinnamon
3 tbsp brown sugar
1 eggs
1/4 tsp vanilla extract
3/4 cups buttermilk
1.5 tbsp vegetable oil

Instructions
In a large bowl, mix flour, baking powder and baking soda. Set aside.

In a separate bowl, mix pumpkin, sugar, egg, vanilla and ¼ cups of the buttermilk. Add to dry ingredients and whisk together. Add remaining buttermilk in small amounts until you reach the consistency you like. The batter should be quite thick, but slightly runny. If you like thinner pancakes, add more buttermilk until you reach the consistency you prefer.

Preheat a griddle on med-high heat and lightly coat with butter.

Spoon batter onto griddle, approximately ¼ cup per pancake, unless you want larger pancakes.

Cook until you see bubbles forming on the top, then gently flip and cook 1-2 minutes longer.

Serve with sweet cinnamon butter and syrup

Roasted Pumpkin Seeds

Ingredients
2 cups pumpkin seeds
2 tablespoons olive oil extra virgin
2 tablespoons unsalted butter melted
1 teaspoon salt
Instructions
If using pumpkin seeds straight out of a pumpkin, rinse them with water.
Drain water, pat seeds dry with a paper towel, then place flat on a baking sheet to dry completely overnight. Don’t leave these to dry on a paper towel, or the dry towel will be stuck to the seeds the next day.
Preheat the oven to 300F.
Toss dry seeds in olive oil and melted butter. Lay flat on a baking sheet and sprinkle with salt.
Bake for 10 minutes, then remove from the oven to stir seeds around, then bake for an additional 10 minutes (20 minutes in total).

APPLE CIDER PUNCH

INGREDIENTS
3 cups apple cider
1/2 bottle, 1.5 cups, sparkling red grape juice
1 cups orange juice
1 tablespoons lemon juice
ground cinnamon
cinnamon sticks (optional, to use as a stir stick)
Ice
INSTRUCTIONS
In a large bowl, combine apple cider, sparkling grape juice, orange juice and lemon juice. Mix well.
Pour into cups filled with ice and sprinkle a small amount of ground cinnamon on the top. Serve with a cinnamon stir stick if desired.
YIELD: 4 CUPS SERVING SIZE: 1 CUP

Even though things didn’t work out quite like I’d hoped for tonight’s class I still got to have some fun in the kitchen with my kids and they got to try some new things! I hope yours did too! Feel free to share your pics with us!

We want to wish our Madison County Food Service Director, Scott Anderson, a very happy birthday today! Without him our Little Chef's Program wouldn't be around today! We will be celebrating all birthdays next Thursday with our cupcake making class and we can't wait to see you all then!!

Unfortunately due to a family emergency we will need to postpone our cupcake class a week or two. We will send the new date out soon. Thank you for understanding!
