Customers of The Village Eatery- Riverdale, Illinois used to say all the time how good the catfish was. How it was different in taste, texture and freshness. It was a best seller! I would always tell them "Because it's real catfish", and then began to educate them on the food scams in our community. When we first decided to open a restaurant we started visiting wholesalers to look at menu items. I noticed a few restaurants (Babas, Sharks) buying swai. At the time, I had no idea what swai was but I noticed it was substantially cheaper and looked like catfish and I saw restaurant owners were buying it by the pallet. Once my husband told me what it was, I was so disgusted and just couldn't believe it. A lot of these restaurants have no integrity whatsoever!! When dining out, make sure you ask the chef what type of fish they are serving, even if it says catfish, etc. I do it all the time and you'd be surprised its swai. 🤮🤢
