Panzanella is a versatile dish that works wonderfully as a main course, side dish, appetizer, or as an excellent way to avoid wasting bread and vegetables.

It's incredibly simple to prepare, yet bursting with flavor, especially when combined with Domus Pacis Extra Virgin Olive Oil!

PANZANELLA

-6 cups Italian bread, cut into bite-size pieces
-3 tablespoons extra virgin olive oil (Domus Pacis Olive Oil)
-salt and pepper to taste
-1/2 cup extra virgin olive oil (Domus Pacis Olive Oil)
-1/4 cup red wine vinegar
-10-15 basil leaves, coarsely chopped
-2 large ripe tomatoes cut into 1-inch cubes
-½ small red onion thinly sliced

Directions

Preheat the oven to 400 degrees.

Toss bread with 3 tablespoons of olive oil, salt, pepper, in a large bowl and place on a baking sheet for 5 to 10 minutes or until golden brown.
Let cool and then place in a large bowl.

While bread is cooling, whisk together 1/2 cup of olive oil and 1/4 cup of red wine vinegar in a small bowl and then add tomatoes, onion, basil, (and any other ingredients of your choice) into the bowl with bread. Toss with your oil and balsamic vinegar and let stand for 20-30 minutes before serving.
