DIVA Q’S HONEY CHIPOTLE RIBS
Honey Chipotle Rib Rub
3/4 cup brown sugar
¼ cup smoked sweet paprika
3 Tbsp kosher sea salt
3 Tbsp honey powder
2 Tbsp ground black pepper
2 Tbsp mild chili powder
2 Tbsp garlic powder
2 Tbsp onion powder
2 tsp chipotle powder
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground chives
Instructions: In a small bowl, whisk all rub ingredients together. Keep in a tightly sealed container. Use on all cuts of chicken and pork.
Honey Chipotle BBQ Sauce
1 Tbsp unsalted butter
½ cup finely diced sweet onion
1 cup sugar-free ketchup
1 cup honey
1 cup brown sugar
1 cup apple cider vinegar
¼ cup Worcestershire sauce
¼ cup chipotle chiles in adobo
2 tsp Cholula® chipotle hot sauce
2 tsp kosher sea salt
1 tsp onion powder
1 tsp garlic powder
1 tsp finely ground black pepper

Instructions: In a pot on medium heat melt butter. Add onions and sauté until softened. Whisk in ketchup, honey, brown sugar, apple cider vinegar, Worcestershire, chipotles, Cholula, salt, onion powder, garlic powder and black pepper. Simmer for 20 minutes. Remove from heat. Use on all cuts of pork and chicken.

Honey Chipotle Ribs
2 racks St. Louis cut ribs
2-1/2 cups apple juice, divided
1 recipe Honey Chipotle Rib Rub
1 recipe Honey Chipotle BBQ Sauce

Preheat grill to 225°F. Remove membrane from ribs. Spritz ribs with apple juice and season with honey chipotle rub. Place ribs on grill bone side down.
Spritz ribs with apple juice every 45 minutes until the internal temperature is 160°F-170°F. Wrap ribs in a layer of heavy-duty foil, meat side down. Add 1/2 cup apple juice to the foil packet.
Place ribs on grill, increasing temp to 275°F. Grill until the internal temperature is 195°F. Remove ribs from foil and place on grill meat side up. Glaze with sauce and grill until the internal temp is 204°F-206°F. Remove from grill; let rest 10 minutes. Slice & serve.
