Every hot day deserves a fresh, cool respite! Enjoy this Lemon Sorbet with friends and neighbors!
INGREDIENTS
9 1/4 C of purified water
17.5 oz lemon juice or fresh-squeezed lemon juice from roughly 30 lemons
(*this is for 12 servings; can reduce amount for fewer servings)
2 C white cane sugar
1 oz frozen raspberries
2-3 fresh basil leaves
Splash of Limoncello
SORBET INSTRUCTIONS
Pour the lemon juice (either fresh or store bought) into a large bowl.
Add sugar and water into bowl. Rip basil leaves into small pieces and add half into bowl, save the other half for later. If using fresh lemons, can add some lemon zest.
Mix and let stand for 10 minutes.
Pull raspberries out of freezer, thaw shortly, break into small pieces, and place back in freezer.
If using the freezer method:
Place the prepared mixture in the freezer for roughly five hours. Pull out of freezer every so often to whisk the mixture.
If using the Salt/Ice method:
Before preparing sorbet mixture, add the ice and salt to the larger bowl for about 15 minutes and let set. Be sure to use a smaller sized bowl for the mixture.
After sorbet mixture is made, place the bowl on top of the bowl of salt and ice and whisk the mixture continuously for roughly two hours.
Once mixture has reached correct consistency, keep the mixing bowl on top of the salt and ice and scoop the mixture out of the bowl using a spatula.
Once the sorbet is ready using either method, scoop the sorbet out into a cold serving dish.
Sprinkle chunks raspberry, and the remaining basil on top.
Optional: Add a splash of Limoncello over the top.

Summer time grazing with your own charcuterie board to celebrate National Cheese Day!
What to Buy:
The golden rule is to take up real-estate with prettily arranged, less-expensive items. Also, don’t feel the need to go to a fancy and expensive store. You can find most of these items in any grocery store and even the Dollar Store! Here's what you should get:
A couple fresh centerpiece fruits. They’ll draw your eye with a pop of color and fill up space. Fresh, larger fruits (like the papaya that I used in this board) are typically less expensive than dried fruits and berries. A bunch of grapes is another natural choice, but feel free to choose something unexpected, like long spears of cantaloupe, watermelon sticks or pomegranate halves.
One hard cheese and two soft cheeses. I’ve found that on a giant board, three cheeses are enough, regardless of the crowd size. I’ve also found that people eat more soft cheese than hard cheese. Typically, I buy one sharp cheddar (my go to is Trader Joe’s Unexpected Cheddar), one brie cheese and one other soft cheese.
Turn an inexpensive soft cheese into cheese into dip. For my third soft cheese, I often buy something super inexpensive and turn it into a dip. In this board, I bought an herbed goat cheese log ($2), whipped it up with olive oil and topped it with salt and pepper. Boom, instant bougie-ness.
A variety pack of charcuterie. Skip the deli counter, the big pack of imported prosciutto that’ll cost an arm and a leg and the fancy logs of cured salami. Instead, buy a variety pack of charcuterie, which will give you the most bang for your buck. Sometimes they’re labeled as snack packs. If any of the dried meat comes wrapped around cheese sticks, unfurl the meat and save the cheese as a snack for later (they’re a dead giveaway that you bought an inexpensive pack).
A small baguette and/or one type of crackers. Thinly sliced bread takes up a lot of room on the board, looks elegant, and usually costs less than buying breadsticks or crackers. If you’re worried about filling up space on your board, you can also buy a box of crackers because it’s less expensive to cover area with crackers than meat and cheese.

The hotter weather may just sneak up on you. Stay indoors or in a cool place during the hotter hours and remember to drink lots of water!
Refreshing Pina Colada Cocktails!
Ingredients:
*2 c. ice
*1 1/2 c. frozen pineapple chunks
*6 oz. cream of coconut, whisked until smooth
*4 oz. pineapple juice
*4 oz. light or golden rum
*2 oz. lime juice
*Maraschino cherries, for serving
1 Place 2 or 3 daiquiri glasses or any desired glasses in the freezer for 5 minutes.
2 In a high-powered countertop blender, combine the ice, pineapple chunks, cream of coconut, pineapple juice, rum, and lime juice. Start the blender on low speed, then increase to high speed. Blend until smooth, 20 to 30 seconds.
3 Divide the piña colada between the chilled glasses and top with cherries.
Tip: Keep all your ingredients as cold as possible for the smoothest, frostiest blended drink!
