As winter approaches, let's eat some spicy and numbing food to ward off the chill.
To make Mapo Tofu:
Ingredients:
- 1 block (about 14 oz) soft tofu, cut into cubes
- 1/2 lb ground pork
- 2 tablespoons vegetable oil
- 2 tablespoons doubanjiang (spicy fermented bean paste)
- 1 tablespoon chili oil
- 2 teaspoons Sichuan peppercorns, toasted and ground
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 green onions, chopped
- 1 cup chicken or vegetable broth
- 2 tablespoons soy sauce
- 1 teaspoon sugar
- Salt to taste
- Chopped cilantro for garnish
Instructions:
1. Heat vegetable oil in a wok or pan over medium heat. Add doubanjiang and chili oil, stir-frying for a minute until fragrant.
2. Add ground pork, breaking it apart and cooking until browned.
3. Stir in garlic, ginger, and half of the green onions. Cook for another minute.
4. Pour in chicken or vegetable broth, soy sauce, sugar, and Sichuan peppercorns. Mix well and let it simmer for 5 minutes.
5. Gently add tofu cubes, stirring carefully to avoid breaking them. Simmer for an additional 5-8 minutes until the tofu absorbs the flavors.
6. Adjust seasoning with salt if needed. Garnish with remaining green onions and chopped cilantro.
7. Serve hot over rice. Enjoy your homemade Mapo Tofu!
