platano maduro/ ripe plantain lightly sautéed in cast-iron pan in peanut oil.
The trick is to wait until the planting the peel is nearly black so it looks like it's rotten but it's not rotten it's just gone sweet and then it's easy to peel and slice
it works best if you have a heavy cast-iron pan and make it hot enough to cook it but not too hot you don't want to burn you want to cook through so really you're cooking it on something in between medium and simmer with just enough peanut oil to coat the surface

once upon a time, when San Diego was small, there was a lovely little restaurant on the south end of Hillcrest where bankers Hill begins, I no longer remember the name, but the cuisine was Belgian owned by an older couple and she was a French-speaking from Belgium so it was more or less French cooking with a kind of country feel very inexpensive and very delicious,
I don't remember her name but her husband was Herman he was German from a village somewhere in Germany a bit taciturn he didn't speak much or smile but he was obviously shy rather than cold
if you did speak with him he would give you limited responses but also he was always busy and hewas the baker. He made the most lovely tarts , predominantly fruit tarts and the crust often tasted like it had some almond in it
they weren't fancy they were more what you might get in a bakery in the countryside in France or Germany they were fabulous and it's in imitation of his tarts that I make fruit tart like this when fruits are in season
as it turns out I found some really sweet blueberries for a very good price at my local
so after eating half of them first two days, I decided to make a small fruit tart in imitation of Herman's tarts
this crust was 3/4 of a tablespoon each of Teff and Amaranth flower
1 1/2 tablespoons of grond blanched almonds
1 1/2 tablespoons of whole einkorn flour which is an heirloom wheat and 3/4 of a tablespoon of all purpose einkorn
A pinch of salt, a small amount of baking powder, and a healthy dash or two of Vietnamese cinnamon
I sweetened the dough with a small amount of monk fruit sugar and an even smaller amount of raw coconut sugar very little
and mixed it with avocado oil and maybe some coconut water I don't remember now
I baked it at 375 until it was done and I did sprinkle a tiny bit of raw coconut sugar on the blueberries
baked tofu made in the toaster oven
I prefer sprouted tofu and then I marinated in a combination of wheat free , toasted sesame oil, plum vinegar, and ginger powder
you can cut large squares like this or you can cut smaller cubes whatever you prefer and then I like to marinate them for at least an hour and then bake at well in my toaster oven which doesn't get as hot as it might I baked it at 4:25 and I said it for 30 minutes and then checked on it so I might've baked it for an additional 15 you have to eyeball it unless you remember how long you baked it for before!
serve with stirfry broccoli or any green vegetable and rice or my favorite is made from

A volunteer Greek oregano except it might be Italian I think it's Greek growing in a cactus she comes back every year and is really a lovely fragrance that I use in cooking all the time
also known as can be used to make zatar by drawing crushing into powder coarse powder and blending with salt, crushed dried sumac berry, and toasted sesame seeds. Some people will add additional spices but that's the basic recipe. The Lebanese are very big on making a bread a fresh whole wheat bread in the oven with olive oil and that Zatar powder sometimes even with feta cheese
but you can also use it the same way that you would use Greek Mexican or Italian oregano in cooking it's fairly similar to Greek oregano a bit more pungent than Italian oregano
like all pungent herbs rich in essential oils it's stimulates the digestive fire and helps circulate the Qi of the gut
this variety of mint comes from Morocco it is called Moroccan mint and is very close to peppermint has a very slight difference fragrance excellent in tea three or four sprigs in a pot of tea black tea or green tea how Moroccans do it with tons of sugar in their case I don't need the sugar
someone gave me this beautiful Lily 15 years ago or maybe 17 and I've had her in the shade all these years and she's always flowered a little bit in spring but this year I moved her into the sun and wow
what I like about this Lily is how easy it is to see the pistal and stamen, the female and male reproductive organs

The other thing that is amusing is that all these years I didn't really bother to put my nose in and gather the fragrance also probably because it was in the shade maybe the fragrance didn't hit me it was off kind of to the side but it's very fragrant extremely fragrant and very lovely it would make a very lovely essential oil for using as a perfume

but then they haven't felt this man's neck and I'll tell you this this guy had a massive reduction in pain that he's had for four or five years after an accident and has failed to get relief
from other therapists
and this was only one treatment auntie caught up off the table and reported immediately relief of it of his pain
and he right away sent his girlfriend to see me for her migraines and neck pain
now in her case I didn't do so many points because her case is much more delicate involving her nervous system and in her case I also did acupuncture channel acupuncture to drain the pathological Qi out of her head
so why did I do so many in one area ???
because I was getting constant feedback from him that it felt good that I was hitting the spots that that were tight , that he enjoyed the process
so there's no one way to treat people everybody needs something different and if they need a lot of needles I will give them that
now you have to be really clear that the person is tolerating it well because you can create too much post treatment soreness when you do this much needling in one spot which is why I never do it on someone who's not very robust

it is an excellent drought tolerant plant for the garden and you can buy at many nurseries in San Diego county and up the coast all the way to San Francisco is where it's natural habitat is.
It supports the California gnatcatcher and quail which is why in the high desert as you're walking home at Sunset and you suddenly hear a flock of quail flying up out of the bush that bushes sometimes this plant
Artemesia is her name; an indigenous wild plant of San Diego county. very fragrant has almost a wild lavender smell. soft
deactivating trigger points in the hip flexor and knee extensors and stimulating the motor point of the tibialis anterior and releasing a trigger point in the same muscle and needling acupuncture points Liv4 and Gb40 for the tightness in her ankle
if you noticed the blue ink on her upper leg that is surgical marker and before needling those points I spent a fair amount of time palpating to determine which were the most tender spots I did not need to mark the points on her lower leg ankle because I put the needle in immediately upon identifying the location but with those large muscles of the upper leg it's really good to mark the spot because if you put one needle in and then keep palpating it'll hurt the needle that's already in #
