Had an amazing Saturday hosting a dinner for our Cousins that are visiting from the Netherlands. They follow my pages and we’re excited to finally try out some So Cal Grilling. We also got to celebrate my uncles 71st birthday. Todays cook was 4 Tri Tips as well as some BBQ chicken.
Smoked this 7 pound pork shoulder picnic roast today. Started it in my Ugly Drum smoker but due to time constraints had to finish it in my kettle. Rubbed down with mustard and this rub that I love from The Pork Shop over in Queen Creek AZ. Smoked over mesquite lump till about 170 degrees the transferred to my kettle till it reached 195 degrees. After a short rest it was shredded up and served. Taste was excellent and the moisture was still intact. A great way to end the weekend!
Started this 12 1/2 pound brisket tonight at 7pm let see how it turns out 16 hours later at 200 degrees in the Ugly Drum Smoker.
Fired up ole Big Red to do some direct cooking tonight with this Tri Tip. Cooked over some charcoal and mesquite wood chunks and seasoned up with one of the new seasonings that was sent to me from a secret santa exchange we had!!!
Beef ribs rubbed lightly with SPG and sauced up with Best West Mild Hickory BBQ sauce. Cooked indirectly over charcoal till internal temperature was about 200 degrees. Pulled and rested then served. Tender, moist, and amazing flavor!!!!

I want to say very special thank you to everybody who wished me happy birthday on Tuesday I tried to keep up to say thank you to everybody but I ended up getting my booster shot that day and had a slight reaction was not feeling good for couple days. So thank you again for the well wishes I really appreciate it!
Tonight we will ringing in the new year with bone in ribeye steaks and loaf of sourdough bread some baked potatoes and a nice steak topper with mushrooms and onions!!
Had to have the fire pit going today we are a little bit north west of Los Angeles and it was 40° at the time of cooking I know I’m in California boy Hah Hah Hah!!!
Sorry for the late post. We have been dealing with lots of rain here. I want to say a very special thank you to my secret santa on the Weber group I belong to on Facebook called “Weberkettleheadz”he and his family have really out done themselves and I really can’t wait to try these new things out. Simple bbq chicken with a light dusting of SPG and using a new sauce we brought back from Arizona. It’s called “Drunken Garlic BBQ Sauce “ from the Queen Creek Olive Mill.
Tri Tip for the win tonight using ! I love this stuff! Go get you some of that!
Cooked it hot and fast with charcoal set indirect on the kettle and added a few chunks of mesquite for the smoke.
Trying out meatballs on the grill for tonight’s spaghetti dinner. Using my new meatball rack that was a prize I won from a Facebook group that I belong to the weber_kettleheadz and also using a great seasoning blend from . Hope it all turns out good. Have a great Sunday night everyone!
Finally get to be home long enough to clean up and use my grills. Tonight it’s thick pork chops and twice baked potatoes from using his house rub and grilled on the kettles. Good eating tonight!!!

I really love the mild flavors this steakhouse rub gave my Tri Tip steaks tonight. Cooked hot and fast burning pure Hickory hardwood in the kettle. Enjoy your Sunday everyone!!

These St. Luis cut ribs were such a hit at the campsite over the week I just had to make them twice. Rubbed down with mustard and used my fave seasoning along with Weber’s own Roasted Garlic seasoning the cooked indirect (one basket in each kettle) for a nice long cook. Yummy yummy in our tummy!!!
4 Tri tips and a bunch of bbq chicken thighs for a small dinner for my Sons graduation from High School. This is the first of a few dinners planned for family and friends due to not having a lot of room lol!!!
Surprise homecoming this week. Why not fire up and make some bomb Tri Tip with a simple SPG rub. Two offset baskets burning a mix of mesquite lump and charcoal burning in the Weber. Along with some corn on the cob. Cooked med and well enjoyed. Hope you all are having an awsome week!
After yesterday’s marathon cook. Tonight the kids wanted simple. Happy to do that! So tonight it was prime rib hamburger patties and beef franks. Cooked hot and fast with mesquite lump wood using My Sage Gourmet All purpose seasoning. And a little no bean chili from a can lol. I was also able to top my dog and burger using the garlic, mushroom, and onion that was the leftover steak topping from last night. It really hot the spot! Hope you all enjoyed your Memorial Day. I can say I did!!!
Yesterday was a very special day for the Metz Family. First was the fact I have come home for a long weekend from my job site out of town so I actually had time to fire up the grills. More importantly was the fact my very dear friends Jan Erik Tadlock and Jessica McCormick Tadlock were in town visiting and I was able to hold a BBQ for them as well as spend some bonding time with my beautiful goddaughter Taylor. They live in AZ and told me they were tired of seeing my BBQ posts and wanted to taste it firsthand! Challenge Accepted!!! So I hit it from three angles. 10 prime cut ribeyes on one kettle over mesquite charcoal. Chicken legs on another kettle cooked with the vortex burning mesquite charcoal. And finally 3 racks of pork back ribs cooked on the Big Papa Smoker burning mesquite lump wood and charcoal. Smoked then wrapped in peach paper and finished off in the smoker. Karla Villavicencio Metz made some homemade mashed potatoes and a great salad as well as some banana bread. It was a great evening of catching up and to have Taylor open up to me really made me feel awsome!!! Have a great weekend everyone!!!
Was able to work local today and make it home to grill up some chicken using my new My Sage Gourmet blends. Love the flavor we got and not overpowering. Garlic blend for the kids and Cajun blend for mom and dad.

UPGRADE!!!! Sorry everyone but I’ve been called out of town for work the past couple of weeks and my grills have been missing me. Anyways I came home today and there was a package waiting for me from and it was my new upgraded engine for my UDS (ugly drum smoker) that I affectionately call Frankenstein. Left is the old original one and the new one is right. I can’t wait to burn and season this in and I have a brisket aging and waiting to go on the smoker real soon! Hope you all have a great weekend!!

Nothing spectacular tonight just regular charcoal and pre seasoned meat from Costco but I did get a good price on the Tri tip and even better it was Prime!!!
Ok my name is Keith, And I now admit I have an addiction. Please welcome to MY Weber kettle family two new kettles. I now have the slate Smokey Joe and the black Jumbo Joe to add to my two green kettles, my red limited edition, and my Big Papas ugly drum smoker. The slate Smokey Joe will be kept In my semi truck for on the road grilling. The Jumbo Joe will be part of my tailgate, park, camping, and beach package for when we are using the car and not a truck that will allow me to take big red. Happy Sunday and happy grilling y’all!!!! Oh and yes I just had to get the salt and pepper shakers as well lol!!
