Pineapple curry , Hokkaido scallop & white prawn, tamarind & shrimp paste
This style of curry is a staple curry from southern part of Thailand . Usually,seafood is plentiful since the southern are connected to Thai gulf and Indian Ocean. Pineapple also grows in these areas . This type of curry is commonly made in every kitchen where the ingredients are available. The unique taste of well balanced between sweet & sour from pineapple, palm sugar, tamarind is always satisfying. One of the curry that you should try .
Making curry is essential in every Thai household in the old days . Basically, the recipe is passing down through generations. My mom gathered all the ingredients namely, galangal , lemon grass,kaffir lime , shallot , garlic , turmeric ,cilantro root , black pepper, Thai chili , etc . Then , she had me pounding all the ingredients in the mortar and pestle. Thai curry is wet paste cooked in coconut milk the fish sauce then added to flavor the curry , palm sugar & shrimp paste also added to balance the flavor .
Pad Thai with grilled Maine lobster is one of my favorite dish @ sea Thai . Traditionally, pad Thai is a signature street food in Thailand. You can find good pad Thai in Bangkok and other provinces. They do slightly different in style but over all the sweet and sour well balanced in texture and noodle is the key for scrumptious pad Thai , fresh bean sprout & chive sometimes banana blossom will be served with this dish .
