It's National Lemon Month! 🎉🍋 Indulge in the zesty goodness with this tantalizing Lemon Bars recipe. Perfectly tangy, irresistibly sweet - these bars are sunshine on a plate! Don't forget to swing by our store to pick up all the fresh ingredients you need!
Ingredients:
- 3 1/2 cups Best Choice Graham Cracker Crumbs
- 1 3/4 cups Best Choice Sugar, divided
- 1 tbsp Best Choice Cinnamon
- 1 1/4 cups Best Choice Butter, melted
- 16 oz Best Choice Cream Cheese, softened
- 2 cups Best Choice Heavy Whipping Cream
- 1 tsp lemon extract
- 15 oz lemon curd
Directions:
- In a large mixing bowl, mix the cracker crumbs, 3/4 cup sugar, and cinnamon.
- Stir the melted butter into the crumbs mixture.
- Press 3/4 of the crumb mixture onto the bottom of a greased 9 x 13 pan. Reserve the other 1/4 of the crumb mixture for topping.
- In another large mixing bowl, beat the cream cheese and remaining sugar until smooth.
- Slowly mix in the heavy whipping cream and lemon extract until soft peaks start to form.
- Spread half of the cream cheese mixture over the crumb crust.
- Gently spread the lemon curd over cream cheese layer.
- Then, spread the remaining cream cheese mixture over the lemon curd layer.
- Sprinkle the rest of the cracker crumb mixture over the finished dish.
- Cover the dish with plastic wrap and refrigerate it overnight
