Good morning,friends! I hope you get some inspiration from some recent meal prep’s. Shrimp Caesar Salad,BBQ Pork and Cabbage Salad, Mexican Chicken Soup and Salad.
A couple of easy and healthy meal prep’s.
Salmon with an organic veggie salad. The salmon has a homemade organic pesto.
Sugar free bbq chicken and organic salad with homemade ranch dressing.
Healthy meals do not have to be complicated. They can be delicious! So many times “diets” are about what you can’t have which leads to feelings of deprivation! When you eat food that nourishes your body it’s amazing how you don’t “need “ junk food! This week’s meal prep are so good!
The last Caprese salad of the season. Garden fresh heirloom tomatoes, fresh mozzarella, garden basil, mixed greens and other goodies.
Shrimp salad with Lemon Pesto dressing.
Chicken Jalapeño Popper stuffed zucchini.
Roasted spaghetti squash topped with a slow simmered meat sauce (organic garden tomatoes) and garlic roasted Brussels sprouts.

Keto mini meatloafs with organic greens and roasted butternut squash.
Bell peppers stuffed with roasted chicken and a marinara of garden fresh tomatoes and roasted garlic,topped with cheese. Served with an organic Italian salad.
Grilled Cajun Chicken breast’s over a bed of creamy garlic cauliflower rice and quinoa(low carb not Keto) and steamed broccoli with drizzled garlic ghee.

I made the sweet chili sauce with golden monk fruit, so very low carb and delicious!
( 1 carb per 2 Tbs.)

Hi Friends!
I made zucchini pancakes today to go with lunch. They were so delicious! Recipe below.
Makes about 8 pancakes.
2 medium zucchini, shredded
2 cloves garlic, minced
2 beaten eggs (large)
1/2 cup almond flour
1 cup shredded cheese
1 teaspoon sea salt
1/2 teaspoon black pepper
Shred the zucchini using a box grater. Place shredded zucchini in a thin kitchen towel and ring out the water. You will be surprised how much water is released! Don’t skip this step or you will have soggy pancakes!
Put zucchini in a bowl and add all the ingredients stirring each time until everything is mixed well.
Over medium high heat add avocado oil to coat bottom of a skillet. Add about 1/3 cup scoop of the pancake mixture to the hot skillet, pressing down to even out the pancake. Cook until golden brown (about 5 minutes) then flip. Continue to cook until golden. Remove pancakes to a paper towel until all are cooked. Serve with Marinara sauce.

The cauliflower crust made a great pizza! I cooked it in the air fryer and it turned out great!
I got up extra early today!
I made thick and rich tomato sauce from another garden harvest. When it cools down you can put it in freezer containers. Doing this I can control the ingredients and zero added sugar! It’s a versatile sauce to use for a base for spaghetti, pizza,lasagna, whatever you can create!
I wanted to beat the heat so I made cauliflower pizza crust. Low carb and delicious! The cooked and cooled crust will last 2-3 days in the refrigerator or can be frozen for 3 months. Although they never make it that long! 😋
