4. Mini Hong-Kong Style Pineapple Buns! (NEW!)

Hong Kong-style pineapple buns are sweet rolls, made with tangzhong dough for extra softness, and baked with a sugar cookie atop them. They are so named because that cookie cover cracks in the oven to mimic the appearance of a pineapple (but they contain no pineapple!).

These are a beloved staple of most Chinese bakeries, and Robin and I have been tweaking recipes for four years now!

They are PERFECTION if you put a pat or two of cold butter in the middle of them! We hope you love these as much as we do.

Starting with the week of Thanksgiving:

We'll be offering Country Sourdoughs for delivery on Wednesday, November 22. Get your order in now if you're interested - to our surprise, they're already selling!!!

For the month of December, we'll be offering our usual bread combinations for delivery on the second Sunday of the month, December 10.

Our annual Christmas cookie collection will be delivered on a day of your choosing from December 17 - 22.

Both orders - for either bread on the 10th or cookies during the week before Christmas - will go live for ordering on Sunday, November 26.

Yes! We have a NEW offering - a cheddar loaf with roasted poblanos AND jalapeños!

Well, in truth, this loaf is not new to us. We've been trying variations of it for, no lie, 4 years now! Which pepper should we use? How should we impart a corn flavor? Is this version too dense? Or too watery? What hot sauce should we punch it up with?

We think we've got something special here. This loaf has roasted poblanos, which lend a depth of flavor that stays with you as you eat. Roasted jalapeños, which give the loaf an immediate bite and a little bit of heat. And then polenta for some mild corn flavor, and a tiny hit of Sirarcha.

Try it lightly grilled with some guac. Warning: you may swoon.

We got to see The Wildwoods perform at The Parlor Room on Saturday. Imagine my delight when they revealed that their merch included a tea towel! At the insistence of Chloe's mom!

So, here are two beautiful loaves that rested beneath our new tea towel.

We're reworked our recipe for our Rosemary, Toasted Pumpkin Seed & Polenta Sourdough. By reducing the quantity of those add-ins, the resulting loaf is much more in keeping with our other savory loaves. And while this makes little scientific sense to me, somehow I think it's easier to taste all of those flavors! We hope those of you who love the original version of this loaf love the reboot even more!

I mean, why not have a little fun on my last day as a full-time baker?

Hi everyone,

Beatrice is about to go through a major transition! We're going to be shifting from selling 2 days a week to 1 weekend a month.

We are closing for the month of March.

Beginning in April we will be selling on the second Sunday of every month.

There will no longer be a subscription service.

This has been a difficult decision for us, but ultimately is the right one for our family for a variety of reasons.

Having said that, we LOVE Beatrice. And we have loved being a little source of joy for our neighbors, especially through the pandemic. And, thus, we very much WILL be keeping Beatrice open. It will just be a much smaller endeavor. As joyful, as community building, as yummy. Just smaller.

Speaking of size, what we've achieved in our little home is quite remarkable! We've sold 4,774 loaves of bread, 1,737 boxes of cookies, and made 3,336 deliveries! We are SO grateful to everyone for their support.

I don't believe I've shared this before, but here is a shot of the bakery itself, which was once a spare bedroom in our house. It is my favorite room, and I promise we will have a prep table covered in dough soon enough!
