Hey, if you were around for our Dinner @ the Thicket events years ago and really want to have some of my cooking back in your life (or if you heard about the hype and are jealous you missed out) then you’re in luck! I’m going to be the chef for a 4 course tasting dinner up here at Colonial Gardens on December 1st!

The full menu will be released very soon, but you can be rest assured that it is built with my stereotypical hyper seasonal and local fixation with all but a couple ingredients having come from the colonial gardens farms, and those that didn’t come from other amazing Missouri staples like Hammonds walnuts, and Askinosie chocolate! This dinner also utilizes and pairs with 4 amazing beers from a local brewer just a couple minutes up the road!

The deadline is closing in, the last of our feeder pigs go to the processor the day after tomorrow(Thursday 8/17)! We still have 4.5 hogs left available for sale or trade, pricing can be found in the prior posts.

At this point we also don’t have the freezer space to bring any home that doesn’t sell, so if you know anyone in the community willing to pay the processing fees and get it to folks in need feel free to pass this on to them and send us a message, we would hate to see our wonderful pork go to waste when there are so many folks in need, but cannot afford to also foot the bill of processing any more.

We still have 4.5 of our Pasture raised, goat milk whey fed Whole and half hogs available! They are $4/lb (hanging weight). Average is 200lbs, so around $800 total, plus processing fees based on what you chose to have the processor do(for most folks this averages around $200) for a whole hog(and half that for a half). We are working hard to sell off the last of our pigs over the next month or so, so this is the last chance to stock up on our pork!

It’s been a very busy week! Tuesday Coppa, Tubby, Dos’s daughter, and Ginger all went to a farm down in Abilene Texas, and Donut to a Farm in Weatherford Texas. It was 24 hours of traveling to get there, drop off the pigs and come back, without being able to take a rest. This was a bitter sweet moment for me as these were the last adult pigs at GTF, and some of my absolute favorites. I’m really looking forward to seeing how they all do do though, and am very happy with the farms they went to!

All that’s left available are 2 breeder gilts, 2 barrows, and 4.5 finished hogs going in on the 17th! If those interest you shoot me a message!

Ginger and Donut are still looking for new homes and I’d love to have them settled in wherever they wind up before they farrow as early as the 7th! If you are looking for some IPPs to add to your farm, you honestly couldn’t find a better deal cause these gals should pay for themselves and then some in less than 8 weeks.

Or if you are more interested in just pork, we still have 4 whole(or 8 half) hogs left available and their processors appointment is set for the 17th!

We’ve decided to offer up the last 5 feeder hogs that we planned to process on farm this fall as whole and halves! These are for sure 🤞 the last we will be offering as we are working to sell the last of our sows right now also, so if you want one this is the last chance to stock up on our pork(and at a steep discount from our normal pricing) head on over to our website to reserve a half or whole!

And if even a half hog is too much for your storage, work with a friend or two cause a 1/4 hog will pretty well fit into a standard fridge top freezer!

If you follow us on YT or have seen the the couple posts I’ve mentioned it in, we are rehoming our stock off to work towards some longer term plans so I’ve got several IPPs available:

Realized I’ve been posting all of this stuff over on my personal Instagram/Facebook because I’m trying to reduce my SM time and effort, but wanted to show off Coppa for those of you that might not already follow me over at .

Coppa competed at the IPPBA show in Mexico, Missouri last week and won best Intermediate Boar, Best Male, and Best in show(and he had some serious competition in those last 2 categories!).

Coppa is the result of a multigenerational breeding project(one of two projects I’ve been running) here on our farm to hammer down the best to type IPP possible. And I think the judges would agree that he’s pretty darn close(those of you that know my eval strategies know that I’ll always work to find a flaw to improve, but gosh that’s not been easy with him). He’s 235lbs at 8months old on 3.5lbs of 16% feed a day, as well as whey, and pasture. Perfect 7/7 underline. Built like a tank with a good distribution of muscle and fat. Gentle as can be, and with a snout every IPP lover can appreciate.

Now on to the exciting for other people side of this. We are working towards some big life changes for a few years(YT video on this to come soon!) and so will be getting out of farming at GTF altogether for awhile to work on those changes. That means that Coppa and all of our other remaining IPPs are available. If you are serious about getting some great IPPs shoot me a message for more details.

I was so relieved and happy when they finally stepped out of the trailer and I knew that they had made it safely, but I honestly wasn’t able to grab a video, or give them any good bye scratches cause I wasn’t sure I’d be able to handle it. Biscuit was the first female IPP I bought, and Oatmeal the first piglet I retained as a breeder for us. Big changes are coming up and this was the biggest first step. I’m grateful beyond measure that the Wolfrums will be giving this set of my pigs an absolutely amazing home 💚

Hey folks! The video from our Easter roaster hog is finally live! Head on over and check it out. I’m absolutely no expert as this was on the third pig I’ve been the one to pull the trigger on, and only the second I’ve scalded and scraped, but it brings me a lot of joy to have taken this first step to moving more of this process onto our farm. Now I just need to renovate that whole back porch space and add a walk in cooler for this fall 🤣

3 whole or 6 halves still available!

These are the last hogs I’m planning to offer like we have the last few years, so if want to stock up on pork from us like we’ve been selling them, be sure to claim one of these fast!

Our farm is drastically downsizing over the next couple months and starting this fall the only way to get pork from GTF will be to join me on farm to process one of only a handful of pigs we plan to raise.

To reserve one of these pigs head on over to our website and put down a deposit in the shop. They are heading to the processor within the next couple weeks, sold or not, so time is short.

We have 4 of our Pasture raised whey fed pigs available.

They are available as whole($5.25/lb hanging)or halves($5.75/lb hanging). These are the last 4 pigs I plan to take into a processor unless specifically requested to as we are completely changing how our farm works(more details on that to come this fall once our downsize is complete). So now is the time to stock up!

We do also have a limited amount of usda inspected retail cuts on our website(more of which will be updated soon from one more pig we are planning to process this way). But once that’s all sold out we will be selling our market freezer and will be done selling retail cuts for good.
