International Pinot Noir Celebration - IPNC in McMinnville, Oregon, from July 26-28, 2024, may be the last event of its kind. Dosage trials for our 2021 Arete' Blanc de Noir have begun! 🍇🥳

Getting the perfect balance in traditional method sparkling wine is like finding the right seasoning for your favorite dish. Imagine adding just a pinch of sugar to each bottle to get that sweet spot. At Iris Vineyards, we have our own special sweet ingredient called Sweet Amalia, made from our dessert Pinot gris wine.

Now, the ideal sweetness for our 'Brut' sparkling wine falls between zero and twelve grams of sugar per liter. We lean towards the drier side, so our first trial involves adding Sweet Amalia in varying amounts: zero, one, two, four, and eight grams per liter. We taste each version to see which hits the mark.

Once we narrow down the range, we might do another trial with even more precise amounts, like 0, 0.5, and 1 gram per liter, or 1, 1.5, and 2 grams per liter. Once we've nailed it, we move forward with disgorging, ensuring each bottle is perfectly balanced, just the way we like it at Iris Vineyards! 🥂
