Our heritage-breed hogs are raised outdoors on pasture for their whole lives using a rotational grazing system. We do not use subtherapeutic antibiotics, do not clip teeth or dock tails, and do not put farrowing sows in confinement crates.

As owners of Black Tansy Farm, we wear many hats: land stewards, animal raisers, soil scientists, small business owners. Grill. Braise. Roast. Sauté. That’s it! If you know those four cooking methods, you’ll be able to cook any cut Black Tansy Farm could throw at you. That means cooking everything you get in one of our bulk shares is easy, and you’ll barely have to plan ahead aside from moving a few cuts at a time from the freezer to the fridge.

It’s all about knowing where the cut came from on the animal. Harder working muscles, like from the shoulder or legs, need to be cooked lower and slower, making them great for braising or roasting. Less-used muscles, like the tenderloin, can be cooked more quickly, making them excellent on the grill or in a sauté pan. After that, turning any cut into a meal can be as simple as adding your favorite sauce, vegetable or starch. Buying in bulk not only offers peace of mind because you know you have secured a local supply of meat for the year, it also saves you money!

At the butcher counter or grocery store, you’ll see a different price per pound for every cut under the sun: roasts, steaks, ground. But by buying a bulk share, that all gets simplified to one price per pound, no matter what type of meat or which cuts are included. That means tender steaks are now priced the same as delicious, slow cooking shoulder cuts. And guess what? If you know some very basic cooking methods, every one of these cuts is delicious and nutritious.

Have you ever tried a ranch steak? What about a teres major? Buying in bulk from local farmers can give you access to cuts you just won’t find anywhere else, which is all the more reason home cooks should give it a try.

One of our favorites at Black Tansy Farm is the Tomahawk Steak. It is a ribeye steak with 8–12 inches of bone cleaned and left on. The bone helps insulate the meat and keep it juicy and tender. The best way to prepare this amazing cut is by doing a reverse sear after dry-brining for 12-24 hours.

Ordering in bulk means more possibilities in the kitchen and less stress for your meal planning. But it requires thinking ahead, and we’re here to help. Before picking a bulk option, like a subscription box or whole animal share, it’s helpful to think about how much meat your household consumes.

To do so, figure out your monthly consumption. Then, compare your consumption with the bulk option that works best for you. Before going all in, you could try a smaller share and see how it fits with your cooking habits. Luckily, our CSA model is flexible with changes, because we know how much life can throw at you sometimes.
