Here is another breakfast idea or even one that can be served as a dessert. You can use store bought coconut yogurt, regular yogurt if you are not avoiding dairy, and you can make your own coconut yogurt. There is a link that shows you how. Layering creates a colorful presentation and every bite of this will be a little different. I love the cacao and cherry idea and all of the nutritional benefits you will get from this are great! You will need to make it ahead of time as it does take some preparation. Hope you enjoy!!

With cooler weather comes warmer foods. Breakfast can start with this great creamy oatmeal made in an insta pot if you have one, or on the stove top. Either way it is great for getting fiber in your diet. Top it with what you like but the maple syrup, cinnamon, seasonal fruit, with some chopped nuts is a great combination to top it off. Angela shares how to save leftovers and has some great overall commentary. Make this ahead of time and you and your family will be all set to start the day off well. Have a matcha green tea or a mushroom coffee on the side and you are making it an awesome day!!

Well I have been absent for sometime. Life has been busy but will try to start back. Realized that we should not be defined by what we eat or don't eat. The goal should be to optomize our health so I am still exploring and we are all individuals on this path. My posts may now include things you did not see earlier, organic clean food including chicken and grass fed beef may appear.
(everything in moderation). Try to eliminate the processed foods and include healthy fats and decrease your carbs. Overall the goal is to decrease the inflammation in our body and improve our gut health. I am still learning and will continue to include things in these posts that will help with that. Happy Holidays to all of you!!!

Here is a great post that includes one of my all time favorites kale. It is a festive salad that has a great combination of anti inflammatory foods and it is delicious!! The avocado gives you some healthy fat and the honey lime dressing will help you absorb the nutrients of the kale better. The cilantro adds a kick and helps with the livers detoxification and overall it is just a great tasting pretty salad! You might want to serve this for one of your holiday gatherings and I bet people will ask for seconds. If you do not like kale just make it with spinach, you can substitute an orange for the clementine and you can always add more to it or make personal changes based on what you like.

With the weather getting warmer a nice breakfast that is a little cooler might be a great treat. I love breakfast parfaits and this is super easy and you can use coconut yogurt or whatever you prefer, your favorite granola, some more fresh berries of your choice, and then top it with a blend of orange sunshine! Mandarin oranges or clementines blended with frozen bananas and yogurt are the topping. This could also make a great smoothie if you used some coconut milk or almond milk to thin it out. Hope you enjoy this for a breakfast treat soon!

How is your week going? Want to make a delicious quick meal for dinner tonight? You know I love to eat meals out of bowls. Here is a Buddah bowl that has rice or quinoa with lentils as its base then some tasty toppings of broccoli and sweet potatoes along with some avocado, red cabbage, and some citrus fruit for a great fresh taste. I love this! It is crunchy full of flavor and very filling! If you want an easy dinner or lunch idea this will be great! It is easy to make and the protein will fill you up. It has brown rice noodles mixed with the tofu and it makes for a delicious bite! Pile up some in lettuce leaves, top with cilantro and chopped peanuts, and have yourself a wonderful meal. Want to really impress your valentine? This gluten free, dairyfree, wonderful chocolate and strawberry ice box cake may be just the thing. Look for the the dairy free coconut cool whip in the freezer section. We all need to have more omega 3 foods in our diet. Wild caught salmon is one way, but after awhile I was tired of just baking it. I was looking for other ways to fix it and then I found this recipe. This is a vegan "Thanksgiving Bowl" It has all the flavors of the holiday season but is perfect for this time of year also. It has roasted vegetables that are full of vitmamins, antioxidants, and wonderfullness! They are nestled in the bowl with some mashed potatoes. You can substitute sweet potatoes if you would like. This bowl is a great dinner that is hearty and full of flavor. You can make your own cranberry sauce if you prefer as it is easy to find fresh cranberries at the market this time of year. Enjoy!

Have you ever cooked using a spaghetti squash? It is easy to fix and once you get the spaghetti out of it you can use it in any recipe that calls for spaghetti. This will be a gluten free and lower carb alternative. This recipe makes a very easy and flavorful topping. You can then add some fresh julienned basil along with some nutritional yeast, feta, or parmesan cheese (whatever fits your preference). This is very satisfying especially on a colder night when you want something warm and filling. Enjoy!

Tis the season to make some holiday treats. Here is a great recipe for vegan gluten free shortbread cookies. The royal icing is made with aquafaba. For those of you that have not heard of this you may want to try it. It is simply the liquid that chickpeas are in and you drain it from the beans. I love smoothie bowls. This one reminds me of the smells and tastes of the holiday season. If you don't like cranberries just increase the amount of strawberries in this. You can add in some spinach (not too much or it will change the pretty color) and I like to add in some coconut oil and sometimes a little almond butter just to add some healthy fat and protein so it sticks with me longer. Top it with whatever you like and enjoy for a great breakfast! Enjoy!

You can find zucchini noodles in most grocery stores these days. No spiralizer needed but, do you know some good ways to serve them? Most people will use them and put on a tomato based sauce. Here is a great alfredo sauce that is vegan and is easy to whip up. If you have never tried to make your own sauce from cashews this is a great recipe. If you are not wanting to be dairy free you do not have to use rice milk or vegan parmesan. The choice is yours and the result is very tasty! I love chia pudding but there are some people that do not like the texture of it so this recipe blends it to make a creamy pudding. Chia are full of protein and good Omega Fatty Acids so they will fill you up. If you like your chia more creamy try this recipe. You still soak them overnight but then you blend them for a creamy treat. You can try cherries or raspberries if you are not a fan of pomegranate seeds. I love meals in a bowl! They are loaded with lots vegetable goodness! This Buddha Bowl is no exception. It has sweet potatoes, broccoli or broccolini, kale or you can use spinach if you prefer, and onion. It is topped with a great chickpea recipe that is seasoned in wonderful spices and then it is drizzled with a Tahini Sauce.
