We've got eggs!
Our new duck 🦆 ladies have started to lay. So we've got a limited number of what I am calling Small ($4) and X-Small ($3) duck dozens. These smaller duck eggs are excellent for baking with easy substitution for chicken eggs without weighing or guessing.
Regular "big" duck eggs are still $5/doz.

Policies: Supplies are limited to stock on hand. Free range eggs. We are not organic. Most duck eggs are washed by necessity. Chicken eggs are only washed if necessary. Chicken eggs are sorted by USDA sizing & weight guidelines.

We welcome clean, closable carton return.

We sell "off the farm" in Payne county. We can deliver locally.
These are cold eggs but all have been exposed to a male so may be fertilized, but are refrigerated so would not (likely) be hatchable.

We do not sell hatching eggs. But may be able to provide project chicken eggs to 4-H/FFA youth upon request.

We have eggs. We don't have a pond on our property (just a duck "koi" pond and kiddie pools), so we have not been affected nor is anyone in the quarantine radius affected by H5N1/HPAI in our area. Ergo, we have eggs available. Prices at the stores may be rising due to inventory squeezes and we are mostly cheeper than Sprouts eggs. Please call or message us.

The same variant of the virus that has been highly pathogenic in poultry appears to be low pathogenic in dairy cattle.

Since the H5N1 virus was first detected in Canada in December 2021 and has since spread to poultry flocks throughout America, people have commonly referred to this virus as highly pathogenic avian influenza (HPAI).

However, Kay Russo, DVM, MAHM, DACPV, believes now that the virus has appeared in dairy cattle in the United States, people need to be more intentional with what they call it. Russo explained why on April 5, while speaking during the webinar, “Managing Novel Disease Introduction and Biosecuity Practices to Protect Herd Health.”

“In my opinion, the disease in cattle at this point should not be referred to as highly pathogenic avian influenza,” said Russo. “I believe it can no longer be considered highly pathogenic avian influenza, given its low mortality, and the fact that it was isolated from a bovine source. It should simply be referred to as either H5N1, or perhaps low pathogenic bovine influenza, at this point in time.”

As the technical services manager, dairy and poultry for Novonesis, Russo has animal health expertise with both species, but she pointed out that the opinions shared by her during the webinar were hers and didn’t necessarily reflect those of Novonesis.

Highly pathogenic versus low pathogenic
Pathogenicity is defined by what a specific virus does to the animals it infects, Russo explained. This is also referred to as the virus “pathotype”.

When it comes to H5N1 in birds, there are both highly pathogenic strains and low pathogenic strains.

She showed a picture of poults that had been infected with a low pathogenic strain. Russo pointed out that the birds in the picture were still “up and around” and some were “puffed out a little bit.” One bird, with its mouth open, may have been experiencing some respiratory distress.

“They’re probably not feeling the best, but by and large, they’re still standing there and they’re looking at you,” she said.

Then she showed a picture of a turkey house that had been infected with a highly pathogenic strain, and birds in that picture exhibited high mortality levels.

In poultry, with low pathogenic strains, the virus is really restricted to the respiratory tract and the gastrointestinal tract, Russo said. The viral proteins in a low pathogenic strain in poultry are cleaved by enzymes primarily in the respiratory tract and the gastrointestinal tract, restricting infection to those sites. However, with highly pathogenic variants, the viral proteins are cleaved by enzymes throughout the body, allowing the virus to infect cells in multiple organ systems, which ultimately causes systemic disease and can be fatal.

Based on those definitions, the bovine cases of H5N1 would more accurately be defined as a low pathogenic pathotype.

While it may be the case that up to 10% of the cattle in the herds are being infected, the affected cattle are not showing significant mortality, she said.

Pathogenicity varies by species
Every time influenza infects a new host, it can mutate. If allowed to infect new hosts freely, virus mutations may eventually render it more pathogenic to cattle. This has been seen previously with low pathogenic avian influenza outbreaks that were less intensively controlled. This is why it will be essential to manage the susceptible populations in the herds to reduce viral cycling and mutation. Russo cautions that while this strain may be classified as low pathogenic in cattle, it is still highly pathogenic in poultry.

Because of this, she urges all dairy producers to be considerate of poultry producers.

“When considering moving cattle and the shedding of the virus, we need to keep our neighbors in mind. We need to allow them to keep their flocks safe, too,” she said. “The poultry people and the cattle people need to come to the same table and decide how to navigate this going forward.”

Miss Sloan and her coopmates are all in explosive molt. Ducks have mostly stopped for the winter. Until further notice, we do not have inventory to spare outside our household. Hens need a break from laying in the fall so they can use nutrients to regrow their feathers for warmth during the winter months. We do not encourage them to do otherwise. Stay tuned to this page for updates.

Looking for something a bit different for dinner that combined eggs and ground beef and found this recipe https://brooklynfarmgirl.com/scrambled-egg-and-ground-beef-casserole/
The recipe calls for 6 eggs. Given most recipes are written for lg chicken eggs which are on average a minimum weight of 2 oz in shell, this translated to using 5 duck eggs.
With this 2 oz rule of thumb you can even use smaller eggs by weighing them out to match. A good kitchen scale is a must. We use an Escali.
Also for speed, we used frozen cut green beans, and a frozen pepper and onion blend. I didn't pick out the onions so this will give an additional flavor profile to the dish.

Meet Silvadene aka Silvie. She lays a large blue eggs and in her 4 yrs (honestly we've lost track of her age without digging through photos) she she's seen things 😬. A tough flock elder. She is a dual purpose easter egger hen who weights 5 lbs with a nice broad breast. We hope to hatch some of her eggs later this year with Caramel IV aka C4 aka BoomBoom

ScarRed is a utility single comb Rhode Island Red. She weighs 4 pounds and lays a brown egg. Scar earned her name because human mom had to stitch up her head when she was younger. She's still under a year old, a Fall 2022 hatch.

I didn't even know there was a Pennsylvania Dutch version. But eggs on the side are even better.
Our young ducks are beginning to lay now. And the new pullets are starting to kick in their egg makers. We can't fufill large orders of 🥚 right now bit can accommodate a one to two dozen order on a first come first serve basis. Half dozens are available as well - please message us for pricing and availability

But our egg sales will be scarce on the chicken side for a while until the new pullets come on line this fall. We has lost 7 laying hens earlier this week toa predator. It was human error and he hopefully has learned his lesson.

Duck eggs though are in stock so hollar if you need or want to try.
