What is deboning all about??? This practice is generally performed after the primal cuts have been removed, using either auto-mechanical or manual methods.
Deboning, also know as Advanced Meat Recovery (AMR), is a process by which the remaining traces of usable meat are removed from bones and other carcass materials. Machinery utilized in this process removes meat from bone mechanically by shaving, scraping, or pressing the meat from the bone without breaking or grinding them. Meat gained from AMR machinery is sometimes called ground beef, beef trimmings, etc.
