Sweet Potato Dog Treats
* 1 cup cooked sweet potato (about one large)
* ¼ cup natural peanut butter 
* 2 large eggs 
* ½ cup old-fashioned oats
* 3 cups whole wheat flour *more as needed
* ½ cup carrot 2 carrots shredded
* ½ cup zucchini 1 small zucchini shredded
* 1 cup baby spinach chopped
Instructions
* Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
* Shred the zucchini, carrot, and spinach in a food processor or with a hand grater. Make sure the veggies are in a fine mix so that they mix well into the dough.
* In a bowl using a hand or stand mixer combine sweet potato, peanut butter, and eggs on medium until mixed well, about 2 minutes.
* Next, add old-fashioned oats and then 2 ½ cups flour a little at a on low speed, mixing in well. If necessary, add additional flour a ½ cup flour at a time just until the dough no longer sticks to the bowl. Add the shredded carrot, zucchini, and spinach, until well distributed in the dough mixture.
* Flour your work surface with WAY MORE flor than you think necessary and knead the dough 3-4 times until it comes together. This dough is going to be tough and sticky….that’s what you want. Use a rolling pin to roll out the dough to ¼-inch thickness ( don’t worry about it being totally smooth and even). Keep adding flour as needed so the cutter won't stick, and the dough won't stick to the surface. You can use a personalized cutter, a small cookie cutter, or just cut into squares and place onto the prepared baking sheet.
* Bake until the edges are golden brown about 30-35 minutes.
* Then turn off the oven heat, and let the biscuits cool and dry in the oven overnight with the light on in the oven.
* Dry the dog treats dry well for a few days on the kitchen counter. I package them in resealable vacuum seal bags and place bags in an airtight container in freezer, taking out a bag as needed 02/10/2023
