For russet potato’s you can do this little trick if you dislike traditional peeling as I do
Boil the potatoes, drain when easily forked... run cold water over for a few mins let cool, then peel the skin right off with your fingers. Easy peasy!

Cold pasta salad, no meat + no dairy... I used to make this with cheddar cheese cubes and salami slices. Add whatever your pallet desires with some Italian dressing or homemade dressing such as - oil + vinegar, salt + pepper, Italian herbs.

My guacamole recipe
3-4 large avocados, fresh but softer not too soft.
1 large lime
Chopped yellow onion
Splash of nacho jalapeño juice
Minced garlic to taste
Optional - diced tomatoes
Chopped cilantro
Garlic powder
Onion powder
Spicy chili lime seasoning
Pinch of paprika
Mush the avocados and stir all ingredients together, add more seasoning or less to taste. Garnish with limes
Enjoy!

Wanted to share my version of top ramen. I decided to look for alternatives since both of my girls are obsessed with top ramen and cup of noodles which have very concerning ingredients and just aren’t good for us, but taste SO good right?! This ramen is SUPER approved by my 6 year old. She asks for my “healthy ramen” now. The jade pearl brand you can get for a much better deal at Costco! You can also add - onion powder (I’m out) thyme, paprika, parsley, any of your favorite seasonings really! Throw in some vegetables also if preferred. I top mine off with chopped green onions. You can get your better than bouillon in beef or chicken too. Let me know if you try this out!
Household favorite & it’s as quick and easy as regular ramen, just with a little more effort 👌🏼

OK. I finally found the plant based “JUST EGG” and it doesn’t disappoint! We can’t have dairy anymore as it REALLY upsets our GI’s plus many other ethical personal reasons. I’ve replaced cream cheese for plant based as well and I really cannot taste a difference. For the coffee I use mostly almond chocolate milk but I came across this vanilla oat milk and it’s sooo good with coffee. I also add a little honey but won’t be using honey after this jar. Plant based diets and vegan meals can be delicious too 🥰

Just made DIY soy sauce and it is so 🔥!
2 cups vegetable base broth
2 tsp honey
2 tsp ACV
Pinch of garlic salt
Onion powder
Garlic powder
Pepper
I never really measure it’s all eye ballin here 👀
Made vegan (mostly) tacos last night... I always make my taco seasoning DIY. Recipe in comments. The veggie crumbles tasted just like meat! With a little olive oil and my taco seasoning you couldn’t tell the difference 🙂

Healthy dinner in under 20 mins!
Chopped & sautéed veggies in h**p oil
Kirklands Brown Rice & Quinoa with amaranth & garlic (pic in comments)
Almost all organic ingredients
Chopped -
Mushrooms
1 large red pepper - male
1 Zuchinni
1 small red onion
1-2 large limes
Minced garlic
Paprika
Onion powder
Garlic salt
Pepper
Himalayan salt
Sautéed in pan for 5-7 mins I used h**p oil. Add in paprika, onion powder, garlic salt, pepper. Lastly add minced garlic about 2-3 mins toward the end of cooking.
Make the brown rice - we don’t have a microwave so I heat on the stove top with 1 large squeezed lime. This rice tastes SO good with lime added and a little Himalayan salt
