During , we’re shining a spotlight on our talented winemaker, Justin Knight, who has been crafting exceptional, award winning wines with Danza del Sol for 15 years and Masia de la Vinya since its acquisition in 2015. 🍷
Despite the long hours, Harvest takes the top spot as Justin’s favorite part of his job—especially the moment when juice transforms into a rudimentary wine. It’s the magic of the process that keeps him passionate every season!
He has a deep love for crafting unique wines at both Danza and Masia. At Danza, his favorites are Vermentino and Super T, both vibrant and complex. Over at Masia, he enjoys creating Verdelho and Orchestra, showcasing the bold, fresh flavors that set these wines apart. Each bottle reflects his passion and expertise, capturing the essence of the vineyards he’s worked with for years.

“Even though I come from a family that has a long history in both Viniculture and Viticulture, I never imagined the road I was metaphorically “traveling” in life would lead me to the wine industry. I graduated from SDSU, with a degree in Interdisciplinary Studies, with an emphasis in three departments (Women’s Studies, Communication, & English). My husband and I moved to Temecula at the end of 2016 after falling in love with this town due to our many prior visits. We are both originally from Northern California, both attended colleges in Southern California, and had lived in a small beach town prior to moving to Temecula. Moving here was exciting for us, but meant we didn’t have any family or friends to rely on. I thought a great way to meet people in our community would be to work for one of the wineries.
I thought I knew a lot about wine, but quickly realized guests in the tasting room had questions that I didn’t know the answers to. That didn’t defeat me though. Instead, it made me want to know more about the world of wine. I enrolled in the CHIP course offered to the Temecula wine industry and that was the push down the bunny hole of curiosity. I took wine certifications through education programs such as the Court of Mastersomms & WSET. I went from being the newbie in the tasting room, to one of our seasoned tour guides, and now our Lead wine educator. I also have had the amazing opportunity to sommelier for private events and teach wine education classes.
I’ve read the books, taken the test, but the best way to learn is by getting into the wine industry and learning from everyone around you. I feel honored to work at Danza and be able to literally go directly to our winemaker, Justin Knight, and ask him a question.
I love wine because it is more than just a beverage, it’s a culture. Wine is science driven. Wine is deeply rooted in history and traditions.
My current favorite wine of ours is our 2020 Barbera. It tastes as if Sangiovese and Tempranillo had a baby. A beautiful combination of fruit, earth, and acidity!”

Happy 🍷 In honor of this day we asked our Director of Hospitality, Walter Carter to share a few words about his experience and journey to becoming a sommelier. Give it a read! 👇
“As a sommelier, my journey into the world of wine began with an epiphany that forever changed my appreciation for the art of wine and food pairing. In the movie Ratatouille, there’s a scene where Remy, the culinary rat, experiences a moment of pure bliss when tasting cheese and strawberries together. Fireworks and bells go off in his mind, symbolizing the perfect harmony of flavors. My “Ratatouille” moment came when I first experienced the incredible pairing of a Chianti with a gorgonzola-crusted lamb chop. The symphony of flavors was so profound and it ignited a lifelong passion for finding the perfect wine and food combinations.
Since that moment, I have been in pursuit to recreate that magic, constantly seeking the perfect pairing. This journey led me to achieve my Level 1 Sommelier certification, a milestone that marked the beginning of a deeper understanding and appreciation of the intricate world of wine.
I recently celebrated my 12-year anniversary at Danza del Sol Winery, where my career began as a weekend server. Over the years, my passion and dedication have led me to my current role as the Director of Hospitality for both Danza del Sol Winery and Masia de la Vinya Winery. In this role, I oversee all aspects of the guest experience, ensuring that every visitor leaves with unforgettable memories and a newfound appreciation for wine.
When it comes to my personal favorites right now, the 2019 Monastrell at Masia de la Vinya Winery and the 2022 Estate Sauvignon Blanc at Danza del Sol Winery, made from our 52-year-old vines are my go to’s.
As I continue my journey in the world of wine, I remain committed to sharing my passion with others, helping them discover their own “Ratatouille” moments and fostering a deeper appreciation for the beautiful symphony of wine and food pairings.”
