🍲 It’s soup season! With cooler days settling in, there’s no better time to nourish your body with a comforting bowl of soup that’s both delicious and packed with nutrients. This Creamy Cauliflower Soup with Greens is loaded with immune-boosting ingredients to keep you strong and healthy throughout the fall season. 🍁
Creamy Cauliflower Soup with Greens
Ingredients:
1 T. extra-virgin olive oil, plus more for drizzling
1 medium onion, chopped
4 cloves garlic, chopped
Sea salt
1 medium head cauliflower (about 3 pounds), florets, and stems
cut into 1-inch pieces
4 1/2 cups water (or can use vegetable broth)
1/4 cup chopped fresh dill, plus more for garnish
5 large kale leaves, tough ends removed and leaves roughly chopped
1 scoop Shaklee Organic Greens Booster
Freshly ground black pepper
Directions:
1. Heat oil in a large pot over medium heat; cook onion, covered, until soft, 4 to 5 minutes. Add garlic and a pinch of salt, and cook for 3 minutes more. Add cauliflower, and pour in filtered water until it reaches just below the top of the cauliflower.
2. Bring to a boil over high heat. Add 2 tablespoons dill. Reduce heat to low, and simmer until cauliflower is just tender about 10 minutes. Stir in greens and Greens Booster, and simmer for 3 minutes.
3. Let sit for 5 minutes to cool slightly. Stir in the remaining 2 tablespoons dill. Puree soup in batches in a blender until very smooth, adding more water (about 1/2 cup) if it's too thick. Return to pot, and reheat. Season with salt and pepper. Garnish with dill, black pepper, a drizzle of oil, and a pinch of sea salt.

🍂 Fall in Love with this Potato Apple Harvest Hash! 🍎🥔
Celebrate the flavors of the season with this delicious, nutrient-packed Potato Apple Harvest Hash. It’s the perfect blend of sweet and savory, combining apples, sweet potatoes, and hearty fall veggies. This hash is a perfect side dish or a filling meal on its own!
Ingredients:
2 medium sweet potatoes, diced 🍠
2 apples, diced 🍏
1 red onion, chopped
1 bell pepper, chopped
1 cup Brussels sprouts, halved 🌿
2 tbsp olive oil
1 tsp cinnamon
1 tsp smoked paprika
Salt and pepper to taste
Optional: Fresh parsley for garnish 🌿
Instructions:
1. Heat olive oil in a large skillet over medium heat.
2. Add the diced sweet potatoes and cook for 8-10 minutes, stirring occasionally until they begin to soften.
3. Add the onions, bell pepper, and Brussels sprouts. Cook for another 5-7 minutes until veggies are tender.
4. Stir in the diced apples, cinnamon, and smoked paprika. Cook for another 3-5 minutes until the apples are soft and everything is golden brown.
5. Season with salt and pepper to taste. Garnish with fresh parsley, if desired.
Serve warm and enjoy the cozy, autumn flavors! 🍂🍽️
