Dr. Temple Grandin vists Mizzou
In a recent visit to Mizzou, animal welfare expert Dr. Temple Grandin toured South Farm and visited with students and community members. She also found time to make an appearance on the Tim's Take podcast.
In Part One, she discusses animal handling and the scoring system created to improve those methods, as well as the understanding of an animal's emotional makeup which helps to explain behavior, particularly in cattle.
In Part Two, Dr. Grandin shares about her new book, Visual Thinking, briefly describing the different types of thinking, their strengths and how visual thinking is so crucial yet often overlooked or dismissed.

Stir Fry recipe
Got lots of veggies you need to use quickly? Choose your favorite protein and whip up a healthy stir fry. Rachel O'Halloran, MU Extension nutrition and health specialist, shows you how!
What you'll need:
• 6 cups cooked brown rice
• 1 cup broth (chicken or vegetable)
• 2 tablespoons soy sauce
• 1 tablespoon cornstarch
• 1 teaspoon garlic powder
• Pinch of black pepper
• 3 teaspoons vegetable oil
• 5 cups sliced fresh vegetables (such as celery, broccoli, zucchini, onions, green beans, carrots, peppers)
• 2 cups uncooked chopped chicken or beef or ½ of a 14-16 ounce package of extra firm tofu in bite size pieces
Directions
1. Cook rice according to package directions.
2. Wash all vegetables.
3. Mix together broth, soy sauce, cornstarch, garlic powder and pepper in small bowl. Set aside.
4. Heat 1 ½ teaspoons of oil in a large skillet over medium high heat and add vegetables. Cook for 5 minutes, stirring often.
6. Remove vegetables from skillet.
7. Heat remaining 1 ½ teaspoons oil over high heat in the skillet, then add beef, chicken or tofu to the skillet. Stir until thoroughly cooked.
8. Lower heat to medium low. Return vegetables to skillet.
9. Pour broth mix over vegetables and meat/tofu. Cook for 2 minutes, stirring constantly, or until liquid thickens.
10. Serve immediately over heated, cooked rice.
11. Refrigerate leftovers within 2 hours. Eat within 3 to 5 days.

Rural Immersion Program
The Rural Immersion program, a collaboration between MU Extension and the MU School of Medicine, took 19 students to Union, Mo. in June. Participants gained hands-on experience in rural health, touring local healthcare facilities and attending discussions on rural health challenges and solutions.
The program aims to help health professional students envision working in rural communities. Participants found the experience invaluable for understanding rural health and community dynamics.

MU Extension, the Missouri Institute for Defense and Energy at the University of Missouri-Kansas City and Veterans Community Project are working on a problem shared by deployed military personnel and urban residents: access to fresh food. The goal is to train 50 military veterans, most within driving distance of Kansas City, to become beginning farmers, and for at least half of them to move on to full-time employment in agriculture. Control the tomato hornworm
Tomato hornworms are big, green and hungry! Measuring up to four inches, they can devour tomato plant leaves and strip them bare if unchecked.
To prevent this, it's important to regularly scout your plants for any signs of hornworm feeding. These caterpillars are skilled at blending in with the foliage, making them difficult to detect until it's too late.
But don't worry, Heart of Missouri Master Gardener, Jolie Russell, has some tips to help you save your tomato plants. 🍅
