Cleaning out the fridge/freezer and have a few random ingredients? 🫑🧅🍄🥬

Here's what I did with what I had on hand...

A couple of chicken thighs
1 red bell pepper
1/4 head of cabbage
1 yellow onion
Some mushrooms
1/2 cup Jasmine rice
1 can chicken stock

Brown the thighs, skin side down first. Get em nice and brown. Remove from the pan when fully cooked.
Deglaze with a splash of stock, if required.
Cook the veggies in the same pan, in the same rendered fat. Add a little oil if necessary.
Use the remaining stock to cook your rice in.

This is just a base recipe. The flavor profile is up to you and what you have on hand.

I seasoned the chicken thighs with salt, pepper, and granulated garlic.
If you are anything like me, you've got a few half-used bottled sauces like oyster, hoisin, etc in your fridge. I added some of those to the veggies as they cooked.

Now I DEFINITELY need to go grocery shopping! 😁🛒
