25 years ago today, we opened KAZ Sushi Bistro. I remember I was very nervous and worried about unpredictable future, much more than excitement. I can’t thank enough to people who supported us, customers, hard working employees, friends and family. I am so grateful for everything I was given. Thank you again for everyone. God bless.
Meet General Manager Melissa Provinsal! Our fearless leader since 2019. Growing up in Portland, Melissa’s mother was a cook on a budget with an extensive garden to pull from, meaning a lot of fresh veggies and meals on the grill.
She loves this time of year because there is so much to choose from – tomatoes, cucumbers, squash, beans… oh my. Plus late summer means it’s Pomodoro season, and she’s enjoying the current summer pasta on Red Hen’s menu. Melissa’s all-time favorite dish made an appearance in 2019, the Hen’s grilled octopus with stewed beans and ‘nduja bread crumbs – “it was simply stunning.”
“We truly have the best team with deep roots. We have people who have been here since the beginning, and people who worked with Mikey before he opened the Hen, and it shows. All of our staff care about what we do and how we are doing it. It is a place that cares for its people and in return, they extend that care to our guests. Easily one of the best teams in the city with the best neighbors and regulars.”
When Melissa isn’t working, she’s spending time with friends, outdoors, and enjoying meals at some of her favorite local spots. Melissa is instrumental in the smooth sailing of the Hen, and we’re lucky to have her. Say hi when you see her!

Labor of Love 🍜💪🏼 | Many hours of careful preparation went into Chef Kaz Okochi's special , which he and his son Sean and team served to 500 ramen lovers at 's on Saturday. It took him more than 10 hours in our kitchen to make 15 gallons of ramen broth from scratch, using 40 pounds of pork bones and 30 pounds of chicken bones. Despite the hard work, Chef Okochi says it was definitely worth it (especially spending time with Sean!).
