Cafe of India – Indian Flavors in the Nations Capital

We will be opening this Christmas Eve and Christmas Day regular hours. Our chefs have created a special menu which we will be serving along with regular menu. Please reserve your table or order online in advance.

Today we bring you ‘behind the scenes’, ‘the spine’ of our yummy delicious meals. A list of must have spices in your rack :

1. Garam masala: garam translating to hot and masala meaning spice is a blend of variety of spices. Its sweetness, floral notes and a touch of heat from back pepper turns any curry or stews.

2. Cumin powder: one can call this spice the daughter of cumin seeds as the taste and fragrant all are same but its addition in a meal comes at a later part.

3. Cumin seeds: the small boat shaped seed is called ‘jeera’ in Hindi. Its warm, earthly flavour with tangy and musky scent makes it an early recipe to be added, so the spice has time to release its essence in the oil or hot broth.

4. Coriander powder: this spice adds a fresh pop of flavour to many spices and can be used in curries and burritos

5. Turmeric: the deep kind of impeccable flavour in most curries? Yes, that’s turmeric. Not only does it offer a flavourful taste but its color is just as remarkable.

6. Kashmiri red chilli power: this spice is more about its color and taste than heat. Its red hue & smokey flavour enhances any basic lentil or curries.

7. Cinnamon powder: from the chai tea journey to biryani stories, this spice is a heart of many Indian dishes. Its sweet and woody flavour can be used in a variety of deserts, baked food and curries.

8. Cardamom: remember the green menthol like spice in our ride pudding? Yes that’s cardamom. This spice add so much earthy and depth to most curry dishes and deserts.

9. Dried fenugreek leaves: A little bitter in taste, when added in dishes blends through seamlessly and mellowly. This herb can be used in dough for extra rich flavour too!

10. Carol seed/ Bishop’s w**d: Very close to thyme like taste, this seed is best used in simmered vegetables, breads and lentils.

11. Black mustard seeds: a very common ingredient in cooking, this seed kicks up any mild ingredient like chicken, potatoes, seafood and legumes. These dark tiny seeds may not look much but adding them in different ways into dish will surely give you a wakeful pleasant punch to your taste bud.
