Happy 100th Birthday to Caesar Salad! 🥗 ’s Caroline Hatchett featured Chef *ta’s Wafu Caesar Salad today in the Washington Post’s Food Section! Caroline notes that the Caesar is Perry’s sleeper hit, the dish Chef Masako has kept on the menu the longest. “It’s an ideal supporting player, she says, to such comfort dishes as chicken karaage and grilled anchovies—the set-up to the meal, not the spike. To her dressing, made extra thick, she adds Japanese togarashi, Kewpie mayonnaise and shio koji, the Japanese fermented flavor enhancer. The salad itself is composed of Little Gem lettuce and sturdy, bitter radicchio, which Morish*ta adorns with white anchovies and flecks of crunchy quinoa.”
“Everybody knows Caesar salad,” says Morish*ta, who won this year’s James Beard award for emerging chef. “To make one no one had tasted before, that motivated me.”
Fridays call for fried chicken! 🍗 We are happy to say that “Karaage,” Chef Masako’s beloved Japanese fried chicken dish, has become a mainstay on the menu at Perry’s. 😉
This delectable recipe holds a special place in her heart as it has been passed down through generations in her family. For our Karaage, we exclusively use chicken thighs with the skin on but boneless, as we believe the crispy skin truly steals the show 🌟
The incredible and distinct flavor of our Karaage comes from a unique marinade consisting of Tamari , sesame oil, sake, ginger, garlic, and konbu. After marinating the chicken in this glorious blend, we coat it solely in Japanese potato starch, deep fry it, and finish it off with a sprinkle of salted lemon sesame sauce. We serve it with a delightful side of Togarashi Kewpie mayo. Not to mention, it’s gluten-free!

“Last Sunday night was nothing short of a dream🌟
Not only did I have the honor of receiving the Rammy Award for Rising Culinary Star of the Year, but the stars aligned even more as I celebrated this award on a very special day - my mom’s birthday😌
Yes, halfway across the world in Japan, the most supportive and inspirational woman in my life was ringing in her birthday, and what a gift we both received!
This journey has been incredible - filled with late nights, early mornings, endless experimentation, and most importantly, a whole lot of passion. To see it recognized in such an amazing award is a dream come true. I am immensely grateful to the for this honor and for acknowledging my dedication to the Japanese comfort food!

Special this weekend! Chilled blanched Okura from with Togarashi kewpie
*ta explains, “This is the only way I used to eat Okra when I was growing up, and I found out that this is actually not a familiar way to eat them in the U.S. when I cooked this for dinner for one night.
We hand-trim the small part of the cap one by one, which usually is a little tough and bitter, and prepare it with the technique called “ITAZURI.” This method, used for both cucumbers and Okra in Japan, involves pressing them with generous amounts of salt and rolling them with our hands to remove fuzz of the Okura. After these preparations, we blanch them, then chill until serving.
It’s very simple but so refreshing – the kind of dish I want to eat all summer long!”
