Black Bean Avocado Quesadillas

Ingredients
• 1 can 400 ml. black beans, with liquid
● 1 shallot, finely chopped
● 1 large garlic clove, center germ removed and finely chopped
● 4 organic sun dried tomatoes, roughly chopped
● 1 tsp cumin powder
● 1 tsp paprika
● 1/8 tsp cayenne pepper
● 1/8 tsp dried chili flakes
● sea salt to taste
● 1 ripe avocado, cut into cubes
● a squeeze of lime
● a few sprigs of coriander, finely chopped
● sea salt & black pepper to taste
● 3 handfuls | 150 gr. shiitake mushrooms, sliced
● sea salt & black pepper to taste
TO SERVE
● 8 gluten free tortillas

Instructions
BLACK BEANS
1. Throw all of the ingredients for the beans in a small pan over medium heat and let it come to simmer. They will be ready when the sauce reduces a little and reaches a creamy consistency.
GUACAMOLE
1. Place all of the ingredients for the guacamole in a bowl and mash with a fork. We generally like our guacamole roughly mashed with a few bigger bits, but you can do as you please.
GRILLED SHIITAKE
1. Heat a non-stick grilling pan on the stove.
2. Salt the shiitake mushrooms to taste and toss them in the pan when it is hot (but not smoking!).
3. Carefully and attentively tumble them in high heat, until they smell and look toasty. This will take only a few minutes, so do not let them burn. Cooking them with no added fat will make them extra smoky and dry.
4. When they are ready, set them in a bowl or plate and season with freshly cracked black pepper.
ASSEMBLING & TOASTING QUESADILLAS
1. Spread guacamole on a gluten free tortilla, put 1/4 of the shiitake mushrooms on top and pour over several spoonfuls of the spicy black beans.
2. Place another tortilla on top and allow the assembled quesadilla to toast in a wide pan on medium-high heat for a minute or two, until the tortillas turn golden brown and feel toasty and crunchy.
3. Flip the tortillas over calmly and carefully — there is no cheese keeping everything together!
4. Repeat for all 4.

Tuscan Bean Soup

Ingredients
● 2 tablespoons olive oil
● 1 medium onion, diced
● 2 organic carrots, diced
● 1 organic potato, diced
● 2 celery stalks, chopped
● 1 bunch organic spinach or kale, stems removed and roughly torn
● 3 cloves garlic, minced
● 1 teaspoon ground black pepper
● 1/2 teaspoon cumin
● 1 teaspoon salt
● 2 cups white beans, canned (drained and rinsed) or cooked beforehand
● 4 cups hot water

Instructions
1. In a large pot, heat olive oil and add onion and cook until golden. Add in other veggies and sprinkle black pepper and cumin over them. Stir well. Cook for 2-3 minutes stirring. If it gets too dry, just pour a little water to prevent sticking and stir.
2. Toss in beans and pour hot water over them. Cook over medium high heat and bring to simmer.
3. Reduce heat to medium low and cook partly covered for about 20 minutes so that all flavors combine well.
4. Serve hot with a little extra black pepper and lime juice.

Healthy Cauliflower Patties

Ingredients:

Wet ingredients
● 1/2 cauliflower head, cut into small florets (250 g)
● One 15 oz can chickpeas (rinsed and drained) (about 280 g)
● 2 tbsp parsley, finely chopped
● 2 cloves garlic, minced
● coconut oil for frying
Dry ingredients
● 1/2 cup chickpea flour (60 g)
● 1 1/2 tbsp flax seeds ground
● 1 tsp onion powder
● 1/2 tsp cumin, ground
● salt and pepper to taste

Instructions:
1. Cook the cauliflower florets in salted water until tender, then discard the water.
2. Meanwhile combine all dry ingredients in a bowl, set aside.
3. Pulse all wet ingredients (except the oil for frying) in your food processor until combined (don't over process).
4. Add the wet ingredients to the bowl of dry ingredients and mix everything together with your hands.
5. Form 8-10 patties and fry them with some oil in a skillet from both sides (about 5 minutes each) until golden brown.
6. Serve with mustard or any other dip of choice.

Healthy Artichoke Dip

Ingredients:
1 cup raw cashews, soaked in water overnight
3/4 cup water
1/8 cup nutritional yeast
1 teaspoon garlic powder
1/2 teaspoon sea salt
1/4 teaspoon pepper
1 (14 oz.) can artichoke hearts, drained and quartered
1 (14 oz.) can hearts of palm, drained and roughly chopped
1/2 cup frozen organic spinach, thawed and drained
1/4 cup dairy-free mozzarella (optional)

Instructions:
1. Preheat the oven to 425 degrees F.
2. To make the cashew cream sauce, drain and rinse the soaked cashews. Place the cashews into a blender or food processor. Add 1/2 cup of the fresh water and blend until smooth and creamy. Add the nutritional yeast, garlic powder, salt and pepper and blend again until very smooth and creamy. Add more water as needed to create a smooth sauce. Set aside.
3. Place the chopped artichoke hearts, hearts of palm, and spinach into a medium sized bowl. Pour the cashew cream over the top and stir in until thoroughly combined. Transfer to a small casserole or Au Gratin dish. I used an 8 1/2-inch oval baker. Top with mozzarella if using. Bake for 25 minutes, until the dip is very warm and the top is bubbly.
4. Serve with pita chips, crackers, sliced baguette, or veggies.
