We take the time to slowly smoke each Demkota Prime Brisket over oak and hickory wood to perfection. We hand carve the meat, once chilled, and dress it in a traditional Passover Brisket Jus of Tomatoes, Vinegar, Honey, and Allspice. If you have not tried our Passover Brisket, you are missing a real treat. This is the most tender, juicy, and flavorful brisket.

Working with was such a pleasure. We have an amazing team here in - when we started working with for Smoke & Sunshine 2024, he had the idea to work with them as the event beneficiary…. He said, “one thing we can all agree on is that mental health, especially in hospitality, is a serious concern. Unfortunately the stigma behind it, is of even greater concern.”

Jeff started Apocalypse BBQ in 2022 and it is quickly becoming one of South Florida’s barbecue destinations. We are pumped to have him this year as one of our pitmasters representing Florida’s unique flavors.

Hector’s passion for barbecue started at an early age. Born in Puerto Rico, raised in North Carolina, he specializes in Whole Hog, Beef Cheeks, and Sausages. His barbecue draws inspiration from his Puerto Rican-Cuban roots while putting his own spin on Carolina classics. Not an easy feat.
Like all of our pitmasters, sourcing meat and working with exceptional product is a major source of pride. Hector uses heritage hogs raised in Lowcountry, and he works the entire animal into his menu.
His first brick-and-mortar operation will open in just a few days now (if not already 😜), and we are humbled that he can come join us for the festivities.
Pitmaster Andy Muñoz is bringing that CaliMex fire to Smoke & Sunshine this year. Coming all the way from Los Angeles, Moo’s Craft Barbecue opened its first Brick & Mortar location in 2021 after running a backyard pop up since 2017.
They were quickly recognized by Food & Wine Magazine as the best barbecue in California in 2020. This year they even received a Bib Gourmand.
Moo’s offers traditional Texas-style Barbecue, as well as many CaliMex sides, specials, and treats.
Meet our next Guest Pitmaster, Chef Charlie McKenna! Charlie originally hails from Greenville, SC where he developed a deep love for true Southern BBQ from his Grandma Lillie. He is an FSU graduate (Go Noles!), and a 2x Memphis in May World Champion.
Lillie’s Q opened in Chicago in 2010 and was named “Best New BBQ” by Food & Wine Magazine. Charlie now has several restaurants in Chicago and Florida. sauces, ribs, and even kettle chips can now be found internationally.

Meet our next Pitmaster in the Smoke & Sunshine Line Up: Jordan Wright, or Wrights Barbecue in Arkansas.
Jordan’s barbecue story started like many others, at home with a - now Wright’s has grown to FOUR locations throughout the state. In addition to their many accolades, recognized Wright’s as the best Barbecue in Arkansas 2023.
They focus on Texas-style BBQ, and burn Pecan Wood sourced from downed trees in central Arkansas.
Tomorrow we are launching a month-long Round Up campaign with the National Alliance on Mental Illness. We hope to raise awareness for Hospitality Professionals and the impact mental illness can have on individuals, friends, and families in the hospitality industry.

Our Chickens are No Antibiotics Ever. That is different than “no hormones, no antibiotics.” ALL chickens used for meat are “no hormones, no antibiotics.” If you want to know more about that marketing bs, get a law degree and get back to me.
Frankly, it’s hard to believe Boston Market sells the same package for $36. They use Tyson by the way. Or Perdue. Or one of the other factory farms that are currently on trial for “price fixing, restraining production, RIGGING BIDS, and manipulation of poultry indices.”
Support small farms. Support local business. Support future rants, if we still have your attention. Take care of yourself and your people. Play the long game.
For the record, I grew up eating the hell out of that meatloaf and squash casserole when it was still Boston Chicken.

However you want. It is extremely versatile. You can bake with it, fry in it, make beauty products (idk?). .mace eats it on top of beef when he’s in keto mode.
