Happy Friday! Shout out to Siete Family Foods awesome customer service! I bought a bag of chips that were past their prime. To replace it (and then some) they sent me this fun box of treats! I have been a fan of their chips but did not know about their seasoning mixes. Looking forward to trying them!

For those who need to be gluten free (I do not, just love the flavor), Siete brand is an option for ya!

Roasted carrots with za’atar, cilantro feta and toasted pumpkin seeds. Yum!

Thank you for this easy tasty recipe!

Made this for Easter dinner but this will be in the rotation for weekday meals.

Roasted veggies are a staple in my house but I was tired of the same roasted carrots with the same warm spices (cumin,paprika etc). Needed to change it up!

This simple mix of ingredients makes it feel like springtime with greens and a crunch.

Gotta love this green cauliflower from for a grain bowl! And my favorite kale almond hummus from

Roasted some cauliflower with olive oil, thinly sliced onion, salt and pepper
Added some cooked farro and cod.
Placed on top of greens with pistachios, avocado and hummus.

No need for a recipe! Just a template of sorts. You can make what you like!
Start with some greens
Add some veggies, toasted, raw, stir fried… or a combo, what ever you like.
Add some protein, fish, chicken, beans, tofu.
And then some goodies, 😋hummus, tzatziki, nuts, seeds, avocado. Use what you have!

Combinations are endless!

Curried Carrot Soup, super easy, tasty, nourishing soup for this chilly weather!

Recipe from Phyllis Vaccarelli, who owned Lets get Cookin, a cooking school that used to exist in Westlake Village. Sadly this cooking school no longer exists. Loved that place! Sampled this many years ago in a cooking class, with both cream and no cream. It is so creamy on it’s own with just the veggies! Have never added the cream.

Recipe
2 Tablespoons butter

1/2 cup onion finely chopped

2 celery stalks, finely chopped

1 leek, white part only, finely chopped

2 teaspoons curry powder

8 large carrots, finely chopped

4 cups chicken stock
1/2-1 cup heavy cream (optional)

Salt, pepper, nutmeg to taste
(note: if using a true stock which is unsalted, you will need to add salt. If using a chicken broth, it is unlikely you will need salt or much of it since broth is not unsalted.)
Could easily add some minced fresh ginger when adding the curry powder.
Garnish with chopped chives.

Melt butter in large saucepan or Dutch oven. Add onion, celery and leeks. Stir and let vegetables sweat until softened but not browned, about 5-8 minutes.
Stir in the curry powder until blended.

Add carrots and chicken stock. Bring soup to a boil, then cook partially covered for about 18-20 minutes. Carrots should be soft.

Strain the vegetables (save the stock!!) and then add them with a little stock to a blender. Make sure the veggies have cooled down a bit. Puree the vegetables.
Return pureed mixture to the pot and reheat (with remaining) stock to a boil. You may decide not to add all of the stock back in but you’ll use most of it. Add salt, pepper, nutmeg to taste. Garnish with chives if desired. Can be served hot or cold.

My tip: If you have an immersion blender, you don’t need to strain the vegetables and transfer to a blender. You can just blend in the pot. It will go faster in the blender for sure though! I love to garnish with what I have on hand, cilantro and pistachios (pictured). Cashews would be great too!

Time to use those turkey leftovers! 😊
Can easily swap the chicken in this recipe for the leftover turkey you have!

Here is a yummy salad you can make from rotisserie chicken.
My family appreciates a salad like this made up so they can make a quick lunch, however they want to build it! Sandwich salad or pita!

Dressing is simple
Mix together in a small bowl the following
1/2 cup of your favorite plain greek yogurt
1/4-1/3 cup of your preferred mayo
1 Tbsp lemon juice
2-3 tsp curry powder
1/2-1 tsp dijon mustard
Pinch of salt and pepper (to taste) If using rotisserie chicken, salt is often not needed!

In a large bowl combine
3 cups cooked chicken (rotisserie makes it so easy!!)
1/2 cup quartered red grapes
3/4-1 cup sliced celery
1/3 cup diced scallions (more for a garnish if desired)
1/2 cup pistachios ( or any nuts you like)
Stir in above dressing to chicken mixture.

Place desired serving of chicken salad on top of a bed of greens with chickpeas.
Enjoy!!

Happy Friday! 🥳 Talking a lot with clients lately about making meals and snacks satisfying.

Sometimes the simplest things make a difference. One of my favorite additions to a yogurt bowl is toasted almonds. The flavor and texture to me is so good! You can do this with any nut you like! Toasted nuts can be a wonderful addition to salads too!

Preheat oven to 350 degrees.
Place sliced or slivered almonds on a baking sheet.
Toast in oven for 3 minutes, check on doneness, shake or turn pan and toast for an additional 1-2 minutes. They can go from not done to burnt pretty quickly! Sliced almonds are thinner and take less time.

Many people feel they “should” have plain greek yogurt but don’t really like it. Some people may really like plain yogurt. To me it is too tart. Adding some flavored yogurt to my plain yogurt is the right combination of sweet and tart for me. I love the variety provided by different flavors like lemon, peach, blueberry or coconut. It can be different each time with different fruits and different yogurts!

I’m not too picky about yogurt brands. I love the name of my favorite flavor right now, peach cloudberry 😍

What is satisfying to me is not to others. What portion is right for me, is not for others.
Exploring what you like to eat versus what you “should like to eat” or allow yourself to eat, will likely help you to move on from the meal or snack and tune into your body for information about hunger/fullness/satisfaction.

Whether a breakfast bowl in the am, snack in the afternoon or this salad over the weekend, have enjoyed my farmers market bounty. from Westlake farmers market and

Simple nectarine salad
Mixed Greens 6 cups?
2 nectarines or slightly firm peaches could work too
1/4 cup thinly sliced red onion
2 Tbsp toasted almonds
2 ounces of goat cheese

Easy salad dressing
2 Tbsp olive oil
2 Tbsp Champagne vinegar
1 Tbsp minced shallots
1 tsp dijon mustard
1 tsp chop fresh thyme
Salt and pepper to taste

Toss the greens with some of the dressing until coated
Add the nectarines, red onion, goat cheese and almonds
Drizzle additional dressing to taste
Although peach and nectarine season is ending, you can use almost any kind of fruit or nuts you want. Apples, asian pear, oranges, pear would all work well.
YUM!

Simple salad with arugula and greens, tomatoes and pistachios
Dressing
1 tsp Dijon mustard
1/4 cup red wine vinegar
1/4 cup olive oil
1 Tbsp minced shallots
Salt and pepper to taste
