It’s been awhile since we introduced anybody in our crew. This is Aiden aka The Big Tingle! He is a Junior at Ashley High School and one of the better up and coming young tennis players in New Hanover County! He has been with us as a driver and pizza man for around a year. He’s got a great work ethic at Jay’s and at his tennis game. Ladies and Gentleman we give you Aiden!

How the 'pizza lab' at this popular Wilmington restaurant makes creativity delicious

Orders are primarily pick-up or delivery at Jay’s Incredible Pizza in Wilmington’s Pine Valley Shopping Center, so most of the space is used for a large kitchen with ample room for creativity.
James “Jay” Askew took over the former Midtown Incredible Pizza at 3600 S. College Road more than two years ago, fulfilling a dream of owning his own business after 40 years working in restaurants.
One of his hallmarks has been regular specials, which Askew often posts to social media as coming straight from their “pizza lab.”
“There isn’t a pizza lab per se but my employees and myself all brainstorm different recipes and pizzas,” he said. “We try them out here at the restaurant. We sample and make changes until it’s ready to be a pizza of the week.”
So far, eight different people (including two customers) have created more than 40 different pizzas in the past two years.
Here are a few of them.
At the ready: Askew likes to have an idea ready when he needs one. One of the first for 2024 was inspired by a popular fast-food rib sandwich and uses house-roasted pork loin, barbecue sauce, onions and pickles.
On the menu: The Meatball Parmesan is one special that made it to the regular menu. It has house-made meatballs, Romano, ricotta and mozzarella on marinara.
Customer faves: The General Tso’s Pizza and The Triple P (with pastrami, pepperoni and roasted red pepper) were customer ideas. A mac-and-cheese pizza has also been requested.
Most creative: Askew said the Mexican Street Corn Pizza, with a base of refried beans with roasted peppers, cotija and sour cream, was one of the most creative. Although the Jalapeño Popper and Chili Doritos pizzas are also unique, too.

Yesterday I created a Thanksgiving Pizza. It is a Chicago Deep Dish Pizza Shell with Turkey Gravy, Sausage Stuffing, Turkey, Mashed Potatoes, Corn, Cheddar Jack, and Mozzarella Cheese with Cranberry Drizzle on top. The question is do we sell it for the next two weeks or not?
