Last night we treated our family to some rosemary focaccia and sweet potato dinner rolls. Our family celebrates Christmas Eve more so than Christmas, so today has been a day of rest and relaxation.

Our cranberry walnut sourdough is the newest addition to our menu and it does not disappoint. Made with 20% whole wheat flour, dried cranberries, and toasted walnuts, this loaf is the perfect Christmas morning treat.
If you missed out on ordering this week, donβt worry - weβll be putting out a New Years menu later today. Youβll see some of the items that were on the holiday menu and maybe some new additions!
Just a reminder that today is the last day to place your holiday preorder! Weβve got two star breads available this year: fig, honey, and thyme & pistachio, orange, and cardamom.
All orders will be ready for pickup at our bakehouse on Thursday (12/23) and Friday (12/24) until noon!
Sunday is the last day to place your order for pickup next week. Here are some of the items you can grab for your holiday table: pumpkin-shaped sourdough, pull apart dinner rolls, and chocolate hazelnut brioche!

Say hello to our latest seasonal focaccia! Weβve topped it with pesto made with basil from Frog Song Organics and their cherry tomatoes, plus eggplant from Honeyside Farms.

Thank you to everyone who came out to the Formosa Gardens Farmersβ Market despite the weather today! We ended up shutting down a bit early, so weβve got some bread that weβre offering at a discount for pickup or local delivery.

This is a persimmon from Frog Song Organics. Itβs a wonderfully juicy fruit (technically a berry) thatβs usually available during late fall/early winter. Itβs flavor, when mixed with cinnamon and allspice, is sweet and oddly reminiscent of maple syrup or brown sugar. Itβs a perfect fall flavor.
Iβm sure many of you have seen that weβre working towards sourcing more local, seasonal ingredients and this is the first step. Weβve taken these persimmons and cooked them down to a jam. We use this jam to create our persimmon babka, but it wonβt always be on our menu.
Part of our goal here is to help support a local food economy and bring us closer to where our food comes from. I hope youβll enjoy our rotating seasonal offerings. Weβll still have some staple offerings that will be available all year, but weβre going to try to support as many local farms, flour mills (eventually), and apiaries as we can.

Our jalapeΓ±o cheddar sourdough is the perfect balance of all purpose, whole wheat, and rye flour. Itβs filled with freshly grated cheddar cheese and jalapeΓ±os.
While thereβs no shortage of jalapeΓ±o flavor, the bread isnβt spicy, so itβs perfect for the whole family. Our jalapeΓ±o cheddar sourdough will be available for order next week!

Here at Black Letter Bread, everything we make contains simple ingredients. We never use preservatives, additives, artificial colors or flavors, and that applies to the fruits and herbs we add to our breads, too.
This week weβll be testing two new sourdough variations: jalapeΓ±o cheddar and basil pesto. We make our pesto from scratch using the basil grown in our own garden.
Weβre currently looking into working with more local farms and regional flour mills to support our local food chain and connect with where our food comes from. Itβll take some time to fully switch to locally sourced ingredients, but we hope youβll join us in this adventure and continue to support local.

Yesterday we celebrated one of the oldest prepared foods: bread. It comes in many forms and transcends global boundaries, being a staple of different cultures and religions.
On World Bread Day, I was grateful for the progress Iβve made in the art and science of bread making. This time last year, I was just beginning my journey. I was creating preferments using commercial yeast, learning the delicate balance of temperature and time, and figuring out how to shape dough.
A year later, Iβve got a six month old starter that I built from scratch, perfected my sourdough recipe, expanded my menu to a few pastries, and participated in local markets.
It may not seem like much, but for a self-taught bread maker with a full time job, itβs something Iβm very proud of. Iβm still such a novice bread maker with big dreams of incorporating regional, stone milled flours and being able to provide for my family with bread. Thank you to everyone whoβs tried something Iβve baked. I canβt wait to continue baking for you.

Our zaβatar focaccia flew off the table at the market, so weβre making it a permanent menu item! This focaccia is topped with zaβatar seasoning, sesame seeds, caramelized onion, and cherry tomatoes. You can find it alongside our rosemary and sea salt and mediterranean focaccia on the website.

Sorry for the radio silence this week. After the market on Saturday I had to venture to Savannah on business. Because of that thereβs no bake this week, but weβll be opening the website for orders on Monday.

While this may look like a beautiful sourdough crumb, the truth is that some errors were made. Specifically when shaping the dough!
Basically, when the dough was shaped and placed into its proofing basket, it wasnβt tight enough. This allows for these (pretty) holes in the crumb, but it also prevents a nice ear from forming on the crust. Regardless, this is sure to be a light and airy loaf!
