WEEK PREVIEW: a summer of ciders!

CLOSED WEDNESDAY (8/13)
We are closed this Wednesday for a private event but our normal tasting room hours resume starting on Thursday. Save up the good times for later this weekend!

ALTAMIRA RELEASE
We are releasing our new basque inspired cider named Altamira. This cider was aged in oak Foeder (aka the large barrel in our tasting room) for eight months, and features Ashmeads Kernel, Chisel Jersey, Porters Perfection, McIntosh, and Golden Russet apples. The blend is has a distinct bittersharp apple profile with bright acidity and a quince-like finish. Available on draft starting on Thursday and in bottles starting this Saturday (8/17). More details on the cider coming later this week!

RITUAL MARKET + SAND HILL BAGEL!
Reminder that on August 25th, just 12 days away, we are hosting Ritual Market from 1-6pm with vendors from across Maine showing off their handcrafted arts and products. Alongside the market, enjoy food from Sand Hill Bagel Co. and Bao & Beyond with live music at 4pm by Katie Daggett Music – save the date!

BLUEJACKET + OTHER HALF

Today (8/7) through Saturday (8/10) we filled our beer taps with nine splendid brews from Bluejacket and Other Half Brewing Company.

A combination of crispy, textured & succinct lagerbiers from Bluejacket served alongside the pillowy, juicy & resinous collection of hoppy ales from Other Half Brewing Company.

Together these breweries serve the full spectrum of beers styles we love. All are available in half pours and full pours for an opportunity to taste a bunch of different offerings. Check out the full beer list below:

METES & BOUNDS

Have you had a chance to taste our newest vintage of Metes & Bounds? M&B is our cider we make yearly with apples from our small (yet mighty!) permaculture orchard on our property along with wild seedlings growing along our roads on Route 135, and this year got the addition of some Old Fashioned McIntosh grown on the northern hill of Winthrop from an abandoned orchard. The cider is fermented in three different vessels and pressed at three intervals during the fall (early, middle, and late). Early pressing consists of our early season fruit–mostly crabapples, middle pressing consists of some of the newer trees we have planted in 2020 that produced apples for the first time this past year, and the late pressing consists of wild seedlings along Route 135 and Old Fashioned McIntosh from northern hills in Winthrop. Each part is blended together at packaging to express the taste of our little slice of the world. The cider features notes of dried apples, cedar wood, and peach jam finishing with a crabapple zing!

Route-135 running along the Cobbesseecontee Lake used to be a popular orcharding road starting in the late 1700s up to the mid-1900s. Many of these seedling coming from the remains of older trees and orchards that used to inhabit Winthrop. This cider is inspired by those early apple growers in Maine and an ode to those who cared for these apple trees till we met them in the last couple years.

Stop by the tasting room today (8/4) to get a taste. Bao & Beyond is serving food from 1-8pm and we are open from 12-9pm. See you in a bit!

We are serving our cider at the Steins & Vines section of the Maine Lobster Festival Thursday (8/1) and Friday (8/2) this week in Rockland. Join us alongside our fellow brewery, winery, and cidery friends around Maine. Tickets are still available via their website!

Our new vintage of Metes & Bounds—made with apples grown on our property and at homesteads along route 135—is now available by the glass in our tasting room. NO PLACE WE’D RATHER BE

Time flies when you’re having fun. The concept of Absolem was discussed back in 2018, our goals and concept ironed out in 2019, started construction of our dreams back in 2020, and finally opened our tasting room in 2022.

This weekend we get to celebrate two years of sharing this tasting room with you and we are grateful for all the support thus far. We are honored and privileged to get to chase our dream of making world class cider and serve them alongside our favorite drinks in our barn.

Even though we’ve been working on this since 2019, we call this our 2nd Anniversary because without your patronage our tasting room would simply be a barn. With you it has become a cultural hub, a place to share a special moment with friends, a chance to explore extraordinary flavors, a moment of quiet, and the place we call home.

Celebrate with us this Saturday, July 27th from 12-10pm. This celebration is to thank you for all the support. Every smiling face reminds us to seize the day. We’ve planted our roots deep, and the good times are just getting started. Meet you in the barn!

THE MAINE INGREDIENT

Meanwhile this weekend, north of the border in Halifax, our friends Stillwell Beergarden and Stillwell are throwing a party in collaboration with Handshake Amaro to showcase some of Maine’s best beer, cider, wine and seltzer. A little Maine themed celebration.

On Saturday July 27th, starting at noon you’ll be able to taste two of our ciders: Bembel (Apfelwein) and Wend (Foraged Cider). Enjoy those alongside a tap takeovers with Oxbow Brewing Company, Belleflower Brewing, Austin Street Brewery, Bunker Brewing Co., Barreled Souls Brewing Company, Tributary Brewing Company, Orono Brewing Company, PortlandZoo, Orono Brewing Company & Oyster River Winegrowers

8 DAYS AWAY FROM OUR 2ND BIRTHDAY!

We are closing in on our 2nd Anniversary Celebration! Join us on Saturday, July 27th from 12-10pm for our annual intergalactic party in the woods. Our barn with be decked out for the party, our parking lot will be expanded (fingers crossed), and we are launching our new outdoor bar. Enjoy the largest selection of our ciders to date—including 30+ different ciders including some past vintages and old favorites available by the glass. The full list is coming next week—stay tuned. These ciders are all available alongside our regular selections of beers, cocktails, spirits, and non-alcoholic options.

With the epic cider list, we will have 8x hours of live music on our outdoor stage along with 3x food trucks throughout the day. This event is free to the public, no tickets necessary. Just come and enjoy the tunes and snacks alongside our ciders!

BARN TAKEOVER: THE VEIL

The last couple weeks, alongside our selection of house ciders, we have focused our beer taps on singular breweries as a sort of brewer showcase. This week we are filling the taps with 9x beers from The Veil Brewing Co. in Richmond, Virginia.

Each trip to Richmond we are impressed by the adept diverse range of robust hoppy ales, delicate lagers, luscious stouts, fruited sours, and wild ales that their team produces. It’s an honor to get to showcase several of their lagers and hoppy beers. Thanks to Vacationland Distributors - Maine for hooking us up. ROOS

Another example of our continued exploration down the path of co-fermented. Roos is a cuvée we make every year with a single varietal cider made with Gravenstein apples rested/co-fermented on different grapes each batch. This vintage features Gravenstein from Scott Farm Orchard in Dummerston, Vermont rested on organic Frontenac Gris grape skins from Armstrong Family Farm located in Fort Fairfield, Maine. After resting on the skins or 14 days, the cider was racked to a singular French oak barrel and topped up with Frontenac Gris wine, before aging for almost two years in barrel. The experience truly blurs the lines between orange wine, a cider, and shares qualities with an oaky white wine. Since this is a singular barrel we are only making this available in our tasting room by the glass. Features bold flavors of orange peel and mango, finishing with notes of spice box and black tea.

Enjoy a glass in the tasting room starting today! Open today from 4-9pm. Freedom's Forage had to cancel today, but Wicked Thai Food.WTF stepped up to fill the food truck spot and will be serving from 5-8pm. Meet you in the barn for good time!

For our next edition of the barn takeover, our beer taps are filled up with beers by The Veil Brewing Co. this week, with 9x limited releases available from our friends down in Virginia. Get a taste of their lagers in half liter mugs or enjoy a selection of world class hoppy beers. All beers available starting Wednesday—until they kick! Thanks to Vacationland Distributors for hooking us up with some spectacular beers following Wavy Days Beer Festival hosted by Mast Landing Brewing Company — we have more beers from the festival going on tap from Bluejacket and Other Half Brewing Company on August 1st! NEW CIDER—ROOS
Our single varietal Gravenstein cider rested on organic Frontenac Gris skins is available by the glass in our tasting room this weekend. An extended 14 day skin contact on these grape skins results in a cider that reminds us of orange wine. Only available in our tasting room by the glass!

Y’all drank through a bunch of kegs this weekend meaning we have a new cider hitting the list (more details coming tomorrow), plus we are down to the last keg of Preserved Memory—our blueberry cider aged in Heaven Hill Bourbon barrels. The beers takes a 180° with a completely new list of beers from Sacred Profane, Tributary Brewing Company, Oxbow Brewing Company, Bissell Brothers, Russian River Brewing Company, and Austin Street Brewery.

RED GIANTS, BLUEGRASS, AND LAGERS

The lager party continues today (Saturday, 7/6) with Sacred Profane lagers still taking over the beer taps, though we are getting low on the two special collaboration beers with Dva kohouti from Prague. To add to the celebration today, Elm City Strugglers will take the barn stage from 5-7pm playing some old timey bluegrass and blues tunes with food pop-ups by The MaAd Egg from 12-5pm and On A Roll Catering from 4-9pm.

RED GIANTS (pictured above)
Our new “super-small-batch” foraged cider is made with apples from three wild seedling apples trees in Litchfield, Gardiner, and Monmouth. One of the trees blessed us with giant apples that truly glow red in color. Some of the most pure reddish color we’ve seen on an apple. The cider overall is lightly tannic but features fruity notes of nectarines and orange. Named and made in honor of our regulars Robert and Stephen who have supported us from the beginning. Robert organizes a poetry reading event each fall, and inspired the name for this cider with one of his poems. This cider is for all our regulars who have supported us and always seize the day. Only available by the glass in our tasting room!

Open from 12-10pm (7/6) today with our regular menu of ciders, cocktails, beers, and wines available all day.

One of our first cherry crops in a long time is coming into form. A sadly rare, yet truly mesmerizing sight. With other crops like plums, blueberries, and apples looking hopeful for this year. Our small slowly expanding permaculture farm hasn’t had as much attention as we hoped—but it still gives us splendor. A small batch cherry cider—anyone?

A new foraged cider is available by the glass this weekend. A nano-batch made from three apple trees from Litchfield, Gardiner, and Monmouth. A cider made in honor of our two regulars Bob and Stephen.

BARN TAKEOVER: SACRED PROFANE

July 4th weekend is for lagers! With that in mind, we are filling our beer taps with lagerbiers from our friends at Sacred Profane in the Absolem barn tasting room here in Winthrop, Maine. 6x different beers brewed by Sacred Profane will be available Wednesday (7/3) through Sunday (7/7) including two special collaboration beers with Dva kohouti that are super limited!

– PALE LAGER (crisp, dry and foamy)
- DARK LAGER (smooth, soft, and foamy)
- AMBER LAGER (a blend of pale and dark lagers)
- ORIGIN 10° (super pale lager made with Dva kohouti and Lokal in Praha, Czechia)
- OPPORTUNITY IPL (india pale lager made with Dva kohouti and Lokal in Praha, Czechia)
- SHANDY (lager blended with lemon soda)

To add to the celebration, we have two live music shows Saturday (7/6) with Elm City Strugglers and Sunday (7/7) with Silver Heels playing tunes. Both are running from 5-7pm to add to a truly special vacationland weekend, and are free and open to the public. Just come drink some lagers and ciders with us. ATLANTICA IS BACK
Our foeder aged cider—Atlantica—inspired by asturian sidra traditions is available by the glass and in bottles this week. A blend that shares flavors and techniques with asturian cider but made with New Hampshire and Maine grown Golden Russet and Calville Blanc D’Hiver apples.

WAVY DAYS IN PORTLAND
Hang out with our team in Portland on Saturday. Kevin and Zack will be at Wavy Days Festival organized by Mast Landing Brewing Company pouring several of our ciders.

BARN SESSIONS WITH KATIE DAGGETT
Katie Daggett Music takes the barn sessions stage again this Saturday (6/29) in our tasting room from 5-7pm. She’s always a great performance and truly excited to have her back.

NEW RELEASE: RŌNIN

Reintroducing an old friend back to our taps. Rōnin, our perry (aka made with pears not apples), returns to our tasting room by the glass. Made with a collection of cultivated Asian pears from Hooper’s Orchard in Monroe, cultivated organic Bartlett pears from Armstrong Farm in Fort Fairfield, and wild seedling pears found around Waldo County along the coasts of Maine. Fermented with native yeasts in stainless tanks since November 2023 and packaged slightly effervescent and with a touch of residual sugar. The blend is lively & herbaceous, with notes of grassy wet hops, ocean spray, green peppercorns, and an herbal quality similar to Sauvignon Blanc. The wild pears add a truly unique flavor that we wanted to express in its purity. Nothing added, nothing taken away.

Available just in time for the Barn Takeover event today with Oxbow Brewing Company — taste it alongside a selection of 20+ beers from Oxbow. As usual, along with the beers we have 16x different ciders available by the glass, cocktails, guest wines, and spirits. Stop by to give Rōnin a taste — meet you in the barn!

Tasting room is open today (6/22) till 10pm with live music from 5-7pm by Skip Guptill Music and food by The Ugly Dumpling till 8pm.

2ND ANNIVERSARY CELEBRATION!

Save the date! Our 2nd Anniversary Party is Saturday, July 27th, and just like last year we are making it one of our biggest celebrations of the year. Prepare yourself for an intergalactic party in the woods in our barn by the lake! I guess another year was written in the stars.

Enjoy the largest selection of our ciders to date—including 30+ different house ciders on draft: some vintage batches, some cider in magnum bottles, and all of the old favorites by the glass! More details on the full list coming in July.

Plus, enjoy live music performances all-day long and three different food truck options throughout the day. Here are some of those details:

THIS WEEKEND IS FOR OXBOW!

Oxbow Brewing Company is taking over the beer taps alongside our cider list this weekend in our barn tasting room from Friday (6/21) through Sunday (6/23). Saturday it all comes together with over 20x Oxbow beers available on draft, in cans, and in bottles and a live performance by Skip Guptill Music from 5-7pm.

The list features farmhouse ales, hoppy blonde ales, mix-fermentation sour beers with different fruits, spontaneous beers, and crispy lagers. Each beer showcasing traditional beer styles with bold flavors. All expressive beers meant be enjoyed in Maine’s woodlands and waterways.
