Happy Monday! We’ve been a little quiet on social media but working behind the scenes. We’re currently in the process of roasting and sampling some new coffees for the summer season that we can’t wait to share with you!

Happy Wednesday! We shared a French Press recipe in our stories from for those of you looking to up your French Press game! If you try it out let us know what you think!

You asked, we’ve answered! Here’s our aeropress recipe 👇🏼

What you’ll need:
17g coffee ground medium fine
250g of water at 205°
Aeropress
Filter
Stir stick

1. Invert aeropress and place in grounds
2. Add 50g of water and stir to make sure all grounds are saturated
3. At 30 seconds add 200g of water
4. At 1:30 stir twice and put cap on after rinsing filter
5. At 3:00 flip aeropress onto mug and gently press finishing around 3:30.
6. Sip & enjoy!

What coffee(s) have you been enjoying lately?

We wanted to highlight our Ethiopia Aricha as we’ve been sipping on it all weekend. This is a washed coffee from the Yirgacheffe region and has bright lemon acidity on the front followed by subtle black tea and florals with a honey sweetness. This one has a silky body and is really enjoyable as you sip and take in the fruitiness.

What’s the deal with flavor notes?

In this photos is what’s called cupping. This is where we do a blind taste of our coffees to make sure we’re reaching the quality we’re looking. Through this process we find our flavor notes, body, and acidity and learn about what needs to be adjusted to bring you the best cup of coffee. Innately in every coffee bean is flavorful goodness that needs to be brought out differently in each coffee. We’re always striving for excellence and honoring all the hard work that’s gone into getting the green coffee to our roastery. Have you ever done a coffee cupping?

Even though this Christmas album features some traditional and classic songs, it’s anything but traditional. With just under a week till Christmas this one is worth a spin ☕️

One of the best things about the weekends leading up to Christmas is the time spent sipping on all the great holiday coffees ☕️ do you agree? Have you had a favorite holiday blend?

Todays brew tip Tuesday: water temperature.

The temperature of your water plays a big role in brewing consistently. Without knowing the temp of your water you could be over or under extracting your coffee resulting in bitter or sour brews 🤢

A lot of kettles have a thermometer built in or you can get a thermometer (some times one made for steamed milk) and check it to make sure you’re brewing with a consistent temp. We recommend starting with 205° water and going from there. ☕️

Introducing our Guatemala Santa Isabel which comes from the Santa Isabel Estate that is located in the Santa Rosa region of Guatemala. This estate is one of the most respected and conscientious estates in Guatemala. They are completely organic and even have a protected nature reserve on their farm.

This Sunday we’re spinning Jim Sullivan’s If the Evening Were Dawn. This stripped down acoustic album is a great one for a slow afternoon. With lyrics that cross from personal to philosophical it’s an enjoyable listen all the way through (and enhanced by a good cup of coffee). We’re particularly stoked to have found this limited pressing of clear with gold vinyl.
