SPAGHETTI AGLIO E OLIO RECIPE 👌🇮🇹👇

- Ingredients :
*1 pound dried spaghetti
*1/2 cup good-quality olive oil
*6 to 8 cloves garlic, very thinly sliced
*1/2 teaspoon crushed red pepper flakes (or more, to taste)
*optional toppings: chopped fresh parsley, freshly-grated Parmesan cheese.

- Directions :

*Cook the spaghetti according to packaging instructions. While spaghetti cooks heat the olive oil in a large sauté pan over medium heat. Add the sliced garlic and crushed red pepper flakes and sauté for 3 to 5 minutes, or until it is lightly golden. (It’s very important that the garlic not burn.)
*As soon as the pasta is ready, use tongs to transfer the pasta to the sauté pan, along with 1/2 cup of the hot starchy pasta water. Toss the pasta continuously until it is evenly coated in the garlic sauce. If the sauce looks a bit too dry, add in another 1/4 cup of the starchy pasta water.
* Taste , season and serve immediately while it’s nice and hot, garnish with chosen toppings .

Carbonara Recipe : 👇🏼

* 300g Spaghetti
* 4 large egg yolks
* 1 cup pecorino freshly grated (100 grams)
* ½-1 teaspoon black pepper (freshly ground if possible)
* 2 tablespoons olive oil
* ½-¾ cup guanciale (100-150 grams)

Instructions 🍝:

* Boil water in a pot, add a pinch of salt when it boils, add the spaghetti and boil until al dente.
* Beat the egg yolk well in a small or medium bowl, add the grated pecorino and pepper, and mix well. Just before adding to the pot, add 1/2 to 3/4 cup of boiling pasta water and mix well.
* Cut the guanciale into strips. Add olive oil and guanciale to a large skillet and cook over medium-high heat until desired doneness. Transfer the guanciale to a clean plate. Do not remove oil (and fat) from pan.
* On medium/high heat, add the al dente pasta to the pan, and a 1/2-3/4 cup of hot pasta water and stir to combine,  remove the pan from the heat and add the egg mixture and quickly combine, add another 1/2-3/4 cup of hot pasta water and toss continually until well combined and creamy. Add the guanciale and gently mix.  Serve immediately topped with freshly grated pecorino and black pepper.
