Summer is here, and so is the heatwave! When the temperature rises, the last thing you want to do is spend hours in a hot kitchen. At Keya's Kitchen , I've got the perfect solution: a refreshing Italian-inspired Tortellini / Ravioli Pasta Salad that's ready in just 30 minutes with minimal chopping. It's light, flavorful, and perfect for those hot summer days.

# # # # Ingredients:

- 10 oz fresh Tortellini (any kind)
- 10 oz fresh Ravioli (any kind)
- 1 English cucumber, thinly sliced
- 1 cup pre-diced red onion
- 1 cup pre-diced green, red, and yellow peppers
- 2 oz can of sliced black olives, drained
- 1 cup halved cherry tomatoes
- 1 cup mini pepperoni slices
- 8 oz fresh mozzarella pearls
- 1/2 cup sliced pepperoncini

# # # # Homemade Italian Dressing:

- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp sugar

1. **Cook the Pasta:** Bring a large pot of water to a boil. Don't forget to salt your water ! Add the tortellini and ravioli and cook according to package instructions. Drain and rinse with cold water to cool.

2. **Prepare the Dressing:** In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, dried basil, salt, pepper, and sugar until well combined.

3. **Assemble the Salad:** In a large salad bowl, combine the cooked tortellini and ravioli, sliced cucumber, pre-diced red onion, pre-diced peppers, black olives, cherry tomatoes, mini pepperoni slices, mozzarella pearls, and pepperoncini.

4. **Dress the Salad:** Pour the homemade Italian dressing over the salad and toss gently to coat all the ingredients.

On those hot summer days and nights when it's just too hot to stand near a stove, there's nothing better than a refreshing, no-cook meal. This Shrimp Ceviche from Keya's Kitchen is the perfect solution!

๐ŸŒด When I traveled to Costa Rica ๐Ÿ‡จ๐Ÿ‡ท and I fell in love with their vibrant version of ceviche. The dish has ancient roots, tracing back to the coastal regions of South America, where it was a staple for fishermen. Today, ceviche is enjoyed worldwide, celebrated for its bright flavors and refreshing qualities.

Here's my easy, delicious version of Shrimp Ceviche that you can whip up in no time:

**Ingredients:**
- 1 lb shrimp (raw or cooked), peeled, deveined, and diced
- 1 cup lime juice, from 6 limes
- 1 cucumber, peeled and diced
- 1 large avocado (or 2 small avocados)
- 2 Roma tomatoes, diced
- 1/2 red onion, diced
- 1/4 bunch of cilantro, chopped
- 1 jalapeno, seeded and minced
- 1/4 tsp black pepper, or to taste
- 1 cup clamato juice (use "picante" version for spicier salsa)

**To Serve:**
- Tostones or 16 tostadas (or a bag of tortilla chips)
- Hot Sauce (Tabasco or Franks Red Hot)

**Instructions:**
1. **Marinate the Shrimp:** Dice shrimp and place into a large glass bowl. Squeeze 1 to 1 1/4 cups of lime juice from 6 limes over shrimp. Stir to combine, then cover and marinate in the refrigerator. Marinate for 1 1/2 to 2 hours for raw shrimp (until no longer translucent) or 15 minutes for cooked shrimp, stirring halfway through.

2. **Prepare the Vegetables:** While the shrimp is marinating, chop the cucumber, avocado, tomatoes, red onion, jalapeno, and cilantro. Using a food chopper will make this process much faster!

3. **Combine and Serve:** When the shrimp is done marinating, add the vegetables to the bowl along with the clamato juice. Stir to combine. Add the avocado and cucumber last, right before serving, to keep them from turning mushy. Serve with hot sauce if desired, alongside tostones, tostadas, or tortilla chips.

Peri Peri sauce, also known as Piri Piri or Pili Pili, originated in Africa, particularly in Mozambique ๐Ÿ‡ฒ๐Ÿ‡ฟ and Angola๐Ÿ‡ฆ๐Ÿ‡ด, and has a fascinating history.

Peri-peri, a hot, sweet, and earthy chili pepper sauce, is believed to have originated in Mozambique in the 15th century. The name "peri-peri" comes from the Swahili word piri piri, which means "pepper-pepper". Portuguese explorers are thought to have created the sauce by marinating African bird's eye chili peppers with garlic, red wine vinegar, paprika, and other European ingredients.
