Happy 9th anniversary to the love of my life In the past year he has certainly lived the vows, In Health & Sickness especially the sickness part. He’s spend many hours researching remedies for my illness, texting emailing my doctor & my health coach, Ashley Swanson from . I’m still healing & detoxing from black mold exposure but thankful that I’ve been feeling better this week! You have been my rock, best friend & the best husband a woman could ask for!

It’s my 40th Birthday. More than ever I am so grateful for the love & support of my husband. He’s definitely lived through the sickness part of the vows with me. My 40th birthday isn’t what I had planned a few weeks ago but I still have so much to be grateful for; my husband, family & living in Kentucky! Cheers to your Sunday! ❤️

I shared my love of homemade salad dressings today, most are very easy to make! Throw everything in a blender & it’s ready to drizzle over a salad! This is one of my favs, Apple Cider Vinaigrette Dressing, and usually serve it with my apple cranberry almond salad but it goes great with most leafy green salads! Here’s to my first recipe posted in 8 months, chewy buttery almond butter cookies! A delicious weekend or weeknight treat! It’s both gluten & grain. I had so much fun planning & cooking for our Valentine’s Day Dinner. Thanks to my amazing husband for helping me with the cooking when I ran out of steam on Saturday & Sunday! This morning we went on a walk at our local park, a perfectly sunny day in Russell Springs! So grateful I can do this since only a month ago This would not have been possible. Cheers to a beautiful Tuesday!

Life is complicated, busy & uncertain but I encourage you to take time to Enjoy nature. Find a local farm that has a trail you can walk or walk in the local parks & enjoy the fresh air & beautiful nature. I hope everyone has a wonderful great start to there week!

Family means so much to me & We had a fabulous time with my nieces this weekend, so I really need to make this a summer tradition!

It’s a going to be scorcher today & this strawberry rhubarb jello is a great refreshing dessert for hot summer days. It’s filled with fresh or frozen fruit with only a small amount of honey as a sweetener. Find recipe at Emmasdailybread.com

Let’s talk about Soups; they are easy to make, make enough for leftovers & load up on veggies & protein. During the summer there’s always lots of fresh veggies from your garden or farmers market that I use for soups. For this particular soup, I roasted a whole chicken in a crockpot & used all the meat for this soup. I added a medium zucchini, large sweet potato, large bunch of kale & 2 small purple potatoes & fresh herbs from the garden. One could also add chopped tomatoes, squash and onions. Most veggie based soups aren’t an exact science, start with a protein such as chicken or meat from a pork or beef roast & add any veggies & fresh or dried herbs you have on hand.
