Diwali, also known as the Festival of Lights, is one of the most important festivals celebrated in India and by millions worldwide. The festival symbolizes the triumph of light over darkness, good over evil, and knowledge over ignorance. Diwali has cultural, spiritual, and social significance, marked by customs that vary across regions but share common themes of hope and renewal.
Origin and Legends
Diwali’s origin is rooted in ancient Indian mythology, with different stories across regions:
1. Return of Lord Rama: In Hindu mythology, Diwali marks the return of Lord Rama to Ayodhya after 14 years of exile, during which he defeated the demon king Ravana. People of Ayodhya celebrated his return by lighting rows of oil lamps (diyas), symbolizing the victory of good over evil.
2. Goddess Lakshmi: Diwali is also a celebration of the goddess Lakshmi, the goddess of wealth and prosperity. It is believed that Lakshmi visits homes during Diwali to bless people with good fortune.
3. Lord Krishna’s Victory: In some regions, Diwali commemorates Lord Krishna’s victory over the demon Narakasura, signifying the end of darkness and ignorance
Appam and Chicken Curry is a classic South Indian dish, especially popular in Kerala. The pairing offers a delightful contrast of flavors, textures, and aromas.
Appam
Appam is a soft, spongy, and lacy pancake made primarily from a fermented batter of rice and coconut. It has a slightly crispy, golden-brown edge with a delicate, airy center that absorbs flavors beautifully. When cooked, the appam has a unique shape—its thin, crispy sides curl up like a bowl, making it perfect for scooping up the curry. The fermentation gives it a light tang, and the addition of coconut milk adds a touch of sweetness. Appams are typically served fresh off the pan, soft yet slightly chewy.
Chicken Curry
The chicken curry served with appam is usually rich, aromatic, and filled with spices. This curry typically features tender, juicy pieces of chicken simmered in a sauce of tomatoes, onions, ginger, garlic, and a blend of spices like turmeric, coriander, cumin, and garam masala. Coconut milk or grated coconut is often added to make the sauce creamy and slightly sweet, balancing the heat from the spices. The curry’s consistency is usually on the thicker side, which clings well to the appam, and the flavor is a deep, layered blend of spice, savoriness, and creaminess.
The Experience
Together, appam and chicken curry create a harmonious blend. The appam soaks up the curry, softening it with each bite and releasing the flavors of the rich sauce. It’s a comforting meal, often enjoyed for breakfast, lunch, or dinner, leaving you with a taste of South Indian warmth and hospitality.
