Tết Trung Thu, also known as the Mid-autumn Festival, is celebrated in Vietnam as the "Children's Festival." It typically falls on the 15th day of the eighth lunar month, usually in September or early October when the moon is at its fullest and brightest. This year, the Mid-autumn Festival will be held on September 29th.

Throughout North and South Vietnam, various regions have their own unique customs and materials used to celebrate the festival. However, certain elements are essential, such as mooncakes, lanterns, and lion dances. In Hanoi, the city comes alive with vibrant colors and an infectious sense of joy as streets are adorned with colorful lanterns of various shapes and sizes. Let us explore the significance of these essential components.

Lanterns
The tradition of hanging lanterns during the Mid-Autumn Festival originates from the story of "Ngưu Lang and Chức Nữ," two lovers separated by the Milky Way. Every year on the 15th day of the 8th lunar month, angels descend to Earth to help the two lovers reunite. To guide Ngưu Lang and Chức Nữ, the angels bring brightly lit lanterns to symbolize their love. Lanterns not only represent light but also signify the connection between humans and nature, as well as the spiritual. They also symbolize family bonding and love among family members.

Mooncakes
Mooncakes have their origins in Chinese history, closely tied to the uprising of Chu Yuan-Chang and Liu Po-Wen. However, when they were introduced to Vietnam, mooncakes became a traditional pastry associated with the Mid-Autumn Festival, carrying significant meaning. Traditional mooncakes come in both sticky and baked varieties, with two common shapes: round and square. Each type of mooncake carries a different symbolism. Sticky mooncakes symbolize the full moon of the eighth month and represent togetherness and the happiness of family bonds. Baked mooncakes signify endurance and resilience, as they endure the presence of loved ones despite the challenges and hardships in the outside world. Baked mooncakes often come with a wide variety of savory and sweet fillings. Round-shaped mooncakes symbolize the full and abundant moon, representing the desire for completeness and abundance in life, while square mooncakes represent the land and the human longing for freedom and happiness, as seen in the traditional Chung Cake.

To blend yourself in the Tết Trung Thu festive atmosphere, visit Hang Ma Street in the Old Town, where the entire street is lit with lanterns. Not far from there, you can find mooncake stalls on every corner.

Hà Nội đón thu, đón bao nhiêu thức quà mà người Việt luôn mong ngóng.

Đầu tiên phải kể đến cốm, những gánh cốm chở mùa thu Hà Nội. Với nhiều người sinh ra và lớn lên hay sống lâu năm ở mảnh đất Hà Thành, họ xem cốm là cách đón thu tao nhã. Từ những hạt cốm dẻo thơm, người dân Hà Nội đã sáng tạo ra biết bao món ngon, mới lạ được nhiều người yêu thích và nhớ thương khi xa Hà Nội; từ bánh cốm, cốm vòng chấm chuối, xôi cốm.
Qua mùa sấu xanh rồi lại đến sấu chín. Nếu sấu xanh dùng để nấu canh, om vịt thì sấu chín lại mang vị ngọt nhẹ mà vẫn có vị sấu chua chua nơi đầu lưỡi. Món ăn phổ biến nhất từ sấu chín là sấu dầm hoặc đơn giản hơn chỉ cần gọt vỏ chấm muối là đủ. Hồng ngâm thực tế không được trồng ở Hà Nội, mà ở một vài tỉnh miền Bắc nhưng cứ đến mùa thu thì khắp nơi ở thủ đô đều có bán.

Chẳng cần phải ăn, Hà Nội cũng đã gây thương nhớ với mùi hoa sữa phảng phất trên những con đường chẳng riêng gì 36 phố phường. Bây giờ ai đến Hà Nội cũng cần check-in với những chiếc xe hoa trên phố Phan Đình Phùng, Thanh Niên hay dọc quanh Tây Hồ và ngắm lá vàng rơi.

Does anyone know Vietnamese people use every part of a banana tree? (English below)

Những ngày mưa chuối không đậu quả, mình trộn gỏi hoa chuối. Lá thì dùng để gói bánh chưng, bánh tẻ nhiều loại lắm, lót đĩa trang trí, gói rau củ thân thiện môi trường, thân cây thì cắt cho bò cho heo, đến mùa lễ hội thân chuối cao còn được lăn dầu làm cột leo thi hội ở nhiều vùng quê. Trong miền Trung, người ta có món đặc sản gium biển nấu củ chuối mà.
The East cũng yêu lá chuối, ngoài để lót trang trí, anh đầu bếp còn làm ra món cá nướng lá chuối – Chao ôi nó ngon! Cá được ướp ít nhất 2 tiếng với riềng, mẻ, nghệ, tiêu Phú Quốc và chút mắm tôm rồi để miếng cá thấm gia vị trong ngăn mát tủ lạnh, sau đó anh đầu bếp khéo léo bọc từng miếng trong lá chuối, mang đi nướng trên than củi cho đến khi vừa chín tới. Món này chấm với mắm sả sa tế nhà làm thì còn gì bằng trong một ngày vào thu nhỉ?

On rainy days when bananas aren't bearing fruit, we make banana blossom salad. Banana leaves are used to wrap traditional cakes like "bánh chưng" and "bánh tẻ" of various kinds, they're used to line serving dishes for decoration, wrap eco-friendly vegetables, and the banana tree trunk is cut to feed cattle and pigs. During festival season, the tall banana trunk is even coated with oil and used as a climbing pole in many rural areas. In the Central region, they have special dishes using banana corm.
At The East, we are also fans of banana leaves. Besides using them for decoration, the head chef creates Grilled fish in banana leaves - it's really a wow! The fish fillet is marinated for at least 2 hours with galangal, lemongrass, turmeric, Phu Quoc pepper, and a bit of shrimp paste. The fish pieces are then allowed to absorb the flavors in the refrigerator's cool compartment. Afterward, wrap each piece in a banana leaf and grill them over charcoal until they're just cooked. This dish is best enjoyed with homemade saté sauce on a lovely autumn day, what more could one ask for?

Bún Thang Hà Nội – Thang noodles

Although traditional Hanoi "Bún Thang" originates from leftovers during Tet (Lunar New Year), repurposed into a hearty dish, this remains one of the delicacies showcasing the intricate nature of Hanoians. Some believe "thang" in the name refers to the "thang" (scale) used in traditional medicine, indicating the meticulous selection of ingredients and balanced seasoning, akin to prescribing northern medicinal herbs. Some simply said in Han character, "Thang" means soup. Therefore, "Bún Thang" can be understood as "vermicelli noodles served in soup."

Chef Nguyen Phuong Hai, a Hanoi native, explains that Hanoi's traditional "Bún Thang" consists of two main components. Firstly, the broth is crafted from dried shrimp heads, chicken bones, pork bone broth, and shiitake mushrooms. Secondly, the "thang" portion includes: thin vermicelli noodles, shredded chicken, minced pork floss, fluffy shrimp floss, thinly sliced omelette, shredded pork skin, salted eggs, coriander, belostomatid (cà cuống) essence, and dried peanut worm.
To start, the cook prepares the broth. A delectable broth is clear and naturally sweetened by the dried shrimp heads and chicken essence. Diligent households may also simmer pork bone broth to enhance the clarity. Mushrooms are a garnish, adding flavor without overpowering.
Next is the "thang" assembly. Thin vermicelli is soaked and stirred before arranging in the bowl. Subsequently, each ingredient is carefully layered over the noodles until the bowl is full, with the ingredients submerged in broth and a touch of shrimp sauce added.

Thiên lý vào mùa anh bếp trưởng nhà mình thử món mới, anh gọi qua là món gỏi bò thiên lý. Bò nướng mềm thêm mùi khói, mùi gia vị đặc trưng của miền núi Tây Bắc, hoa thiên lý xanh mát bùi bùi, bắp cải thì giòn tan. Anh bếp kết hợp với sốt chanh dây cho nó hơi Tây mà vẫn Việt. Tonkin creeper is in season now so our Chef created a new dish inspired by it. He hasn't named it yet, simply said “ salad” but we know it has more. The grilled tender beef is sparked from the West North spices, the original taste of the Tonkin creeper with the crunchy of fine sliced red and white cabbage. Passion fruit sauce is used for a well-combination of the East and the West. The dish hasn't had a name but we know it is delicious and will soon be on our seasonal set menu this summer end.

Hanoi has been experiencing some extreme temperatures ranging from 40-44 degrees Celsius over the past few days, which can make it quite unpleasant to live and explore the area. So, what's the easiest way to avoid this relentless heat?

One approach is to consume more salads and fresh ingredients, as opposed to heavy and deep-fried foods. For example, you could opt for Phở cuốn (fresh noodle sheet rolls) rather than Nem Rán (deep-fried spring rolls) to feel light and invigorated. Another tip is to avoid spicy foods that might only exacerbate the discomfort.

But perhaps most important of all, make sure to stay well hydrated and maybe even indulge in a cold beer (if you're of legal age, of course!). If not, look for refreshing smoothies and juices to quench your thirst.
