Grilled Summer Vegetable Pasta Salad with Corn, Tomatoes, Broccoli, a Garlic Lemon Ricotta Sauce & Basil- recipe below

I first made and shared this in 2020, it was delicious back then and it’s just as delicious now. Pasta salad is a summer staple in my opinion. Now if we could only get some damn sunshine in SoCal to go with it🌞

VEGGIES
½-1 yellow onion, diced
2 stalks broccoli, florets and stems, chopped into bite sized pieces
2 heaping cups cherry or grape tomatoes, halved
4 ears corn
2-3 tbsp olive oil
Salt and pepper to taste
Butter

SAUCE:
2 cups whole milk or vegan ricotta cheese
½-1 lemon, zest and juice, to taste
2-3 cloves garlic, grated, to taste
½ cup olive oil
Salt and pepper to taste

TO FINISH:
1 lbs cooked pasta noodle (fusilli, bow-tow, macaroni all work well)
1 cup olives (black or kalamata)
Chopped fresh basil, optional

To make the veggies, heat up the grill. Meanwhile, make a foil boat and add all the veggies but the corn to it. Add the oil, salt and pepper, and toss well. Once grill is hot, add the veggie boat and corn. Once the corn has warmed for 30 seconds to a minute, rub butter on it. Mix the veggies and turn the corn 2-3 times, cooking for about 15-20 minutes or until tender and cooked through. Remove from the grill and set aside. Once the corn as cooled slightly, cut the kernels off the cobb.

Meanwhile, make the sauce by combining all the ingredients in a boil and mix well.

Add the veggies, corn kernels, olives, and noodles to the sauce. Mix well. Add fresh basil if using and season with salt and pepper to taste. Enjoy!

this is me right after a 1 hr meditative breathwork session 👆 💫 feeling tender, raw, and starting to crack open 💫 there are parts of me i always hide, and i can feel them starting to come towards the light. 💫 i once said on my podcast that i don't care what people think of me and i can see now how that wasn’t the whole truth... 💫 but i wasn't willing to admit that just yet because i was trying to protect little cara. sometimes i don't want to admit there's a scared little girl inside of me who fears her true essence will be rejected. that it isn't okay for her to truly be seen... who is scared she won't be met with unconditional welcoming. 💫 but by hiding parts of me in fear of rejection from others, i am also, in a roundabout way, rejecting myself. 💫 i realized today, during my breathwork session, that the only person who needs to unconditionally welcome me....is me. 💫 who else is shedding, once protective but now constrictive, layers of people-pleasing tendencies? 💫 #selflove *i can not wait to finish my breathwork facilitator training and share this work with others.

3 deep breaths for a mental health pause & to calm your nervous system. i always turn to my breath when i feel uncomfortable emotions. i just began my training to become a breathwork facilitator BUT i used to think breathwork was dumb. let me tell you a story. in 2017 i went to a women’s retreat where i first learned about breathwork. the guided practice began & i quickly realized that controlling your breath is actual WORK. and i couldn’t be bothered to do it. i just laid there, eyes closed, relaxing. women around me were having visceral experiences, having visions, crying, laughing. “no way would breathing have that impact on me. this is stupid” - i thought. i had many more experiences like this at retreats & workshops over the years. this all changed last year during the pandemic. i finally decided “what do i have to lose, i will actually commit and do the WORK of breathWORK” i did a 75 min meditative breathwork class. and holy f**k i felt like I was on molly. i was so in my body, so in my heart. which is really saying something since i’m a type-A, over thinker w a history of an ED. i am always in my head. and this made me feel like i was high on drugs. in a good way. just from breathing!!!!!!!! i kept practicing, doing more workshops. i felt lighter, more at peace, more connected to myself in my day to day life. my energy & mood was transforming. i became hooked. your breath is so powerful. and i am so excited to soon be able to offer breathwork as part of my coaching practice. it’s such a powerful tool to get you into your body, to release trauma & stuck emotions, to shift your energy & mood. there is only so much that thought-work & mindset work & talking can do. eeeeee! i am just so excited. have you tried breathwork before? what are your thoughts?
