It is so light and delicious and you will never guess there’s spinach inside if you don’t know! Give it a go, you won’t regret it 😇 Definitely the best summer cake out there. Would you like to try it? SPINACH CAKE 300G BABY SPINACH 200ML OIL 4 EGGS 300 G SUGAR 400 G FLOUR 1.5 TSP B. POWDER 1 TBSP VANILLA METHOD 1. BOlL SPINACH, ADD OIL AND PUREE IN THE BLENDER 2. MIX EGGS + SUGAR + VANILLA AND BEAT WITH THE MIXER 3. ADD FLOUR + B. POWDER /GENTLY WITH SPATULA 4. DIVIDE IN TWO TINS, I USED 6” TINS, BAKE AT 160°C FAN FOR AROUND 40 MINITES 5. LET TO COOL DOWN AND SEPARATE EACH LAYER IN 2 HALVES SO YOU HAVE 4 LAYERS IN TOTAL. FILLING 250G MASCARPONE 100ML DOUBLE CREAM 1TBSP ICING SUGAR 1 TSP VANILLA EXTRACT BEAT THE MASCARPONE WITH THE ICING SUGAR. IN A SEPARATE BOWL BEAT WITH ELECTRIC MIXER THE DOUBLE CREAM AND VANILLA EXTRACT TO STIFF PEAKS. FOLD THE CREAM AND MASCARPONE TOGETHER WITH A SPATULA, BIT BY BIT. PREPARE YOUR STRAWBERRIES AND ASSEMBLE THE CAKE BY ALTERNATING LAYER OF SPONGE, FILLING, STRAWBERRIES. ICE THE CAKE WITH THE REMAINING CREAM, DECORATE WITH SPONGE CRUMBS AND STRAWBERRIES AND REGRIGERATE. BEST TO CUT WHILE COLD BUT EAT YOUR SLICE WHEN AT ROOM TEMPERATURE. ENJOY!
