When Wes and I started Green Rascal we had talked a lot about what we wanted the company to represent. This recipe is 👌so easy to make and another way to hide those veggies. Cube bread of your choice Slice tomato In another bowl add: 12 large eggs 3-4 scoops of green rascal and mix! Spray cookie sheet and layer bread, tomatos, a little cheese & your egg/GR mixture. Bake on 350 for 20 minutes or until eggs set. We originally intended Green Rascal to be used by adding it to smoothies. It was a no brainer as its easy to conceal, no weird gritty taste and it lasted way longer than your store bought spinach or kale.
