Ayurveda and the 6 tastes ๐พ Ayurveda sees rasa, or taste, as a powerful therapeutic tool that determines how we experience our food and therefore the impact on our health and longevity. Ayurveda recognises six tastes, each of which has a vital role to play in our physiology, health, and well-being. Depending on our constitution and imbalances, different quantities are included in very meal. The sweet, sour, salty, pungent, bitter, and astringent tastes combine in countless ways to create the incredible diversity of flavors we encounter throughout our lives. The six tastes: Sweet ~ Madhura ~ Earth and Water Coconut, mangoes, dates, sweet potatoes, corn, rice almonds, cashews. Sour ~ Amla ~ Earth and Fire Lemon, lime, pickles, fermented foods, yoghurt, alcohol, vinegar, tomatoes. Salty ~ Lavana ~ Water and Fire Seaweed, soya sauce, tamari, all salts. Pungent ~ Katu ~ Fire and Air Chillies, garlic, ginger, cloves, radish, turnip, mustard greens, black pepper. Bitter ~ Tikta ~ Air and Ether Kale, sesame seeds, fresh turmeric, coffee, dark chocolate, dill, fenugreek. Astringent ~ Kashaya ~ Air and Earth Apples, pomegranate, rosemary, turmeric powder, most beans, fennel, basil coriander.
